Yeast Rolls -
Take 1¼ cups milk scalded and
cooled : use the ¼ of this and dissolve 1
yeastcake in it.
Beat 1 egg well add 1 tb. sugar
2 tb. butter, milk & yeast, 3½ cups
flour, 1 t. salt. Let rise twice it's size
knead make into rolls, rise again
and bake.

## Ingredients
- 1 1/4 cups milk, scalded and cooled
- 1 yeastcake
- 1 egg
- 1 Tbsp sugar
- 2 Tbsp butter
- 3 1/2 cups flour
- 1 tsp salt
## Instructions
1. Scald and cool 1 1/4 cups milk. Take 1/4 of the milk and dissolve 1 yeastcake in it.
2. Beat 1 egg well. Add sugar, butter, remaining milk, yeast mixture, flour, and salt.
3. Let rise until twice its size.
4. Knead and make into rolls.
5. Let rise again.
6. Bake at 350°F for 15 to 20 minutes. -

# White Cake

## Ingredients
- 2 1/2 cups flour, sifted well
- 1 2/3 cups sugar
- 2/3 cup Spry
- 1 tsp salt
- 3/4 cup milk
- 3 1/2 tsp baking powder
- 1/2 cup milk (additional)
- 3 eggs
- 1 tsp vanilla
## Instructions
1. Blend together flour, sugar, Spry, and salt.
2. Stir in 3/4 cup milk and baking powder by hand into the above mixture.
3. Add an additional 1/2 cup milk to the above.
4. Add eggs and vanilla; mix to combine.
5. Bake at 325°F for 30 minutes. -

1 jigger Blended Whiskey.
Juice of ½ Lemon.
1 tspn. Powdered sugar
shake with cracked ice and strain into
small glass Garnished with fruit.

3 cups chilled Welch's.
Combine the eggs and sugar and beat 1
minute add chill Welchis. Stir well pour into

# Viennese Fried Pastries

## Ingredients
- 2 cups flour
- 4 egg yolks
- 3 Tbsp powdered sugar
- Pinch of salt
- 5 Tbsp wine (see Editor's Notes)
- Fat or oil for deep frying
- Powdered sugar for finishing
## Instructions
1. Combine flour, powdered sugar, and salt.
2. Add egg yolks and wine; mix together like pie crust until dough comes together.
3. Knead with the palms of your hands for 20 minutes until smooth and elastic.
4. Let dough rest for 20 minutes.
5. Cut dough into small pieces and roll each piece out flat and thin.
6. Cut 4 slits in each piece.
7. Pass a wooden spoon handle through one of the cuts to shape the pastry into a rosette or bow form.
8. Lower carefully into hot fat or oil.
9. After a minute or two, remove the spoon handle and allow the pastry to brown on both sides.
10. Remove when golden brown and drain briefly.
11. Sprinkle generously with powdered sugar while still warm. -

## Ingredients
- 2 Tbsp butter
- 1 cup chipped beef (dried beef), minced
- 1 cup thick strained canned tomato (see Editor's Notes)

- 2 cans spaghetti in tomato sauce (Franco-American or similar — see Editor's Notes)
- 1 1/2 cups leftover beef, ham, corned beef, or combination, chopped or ground
- 3/4 tsp salt
- 1/2 tsp pepper
- Buttered bread crumbs (for topping)
## Instructions
1. Chop or grind leftover meat and combine with salt and pepper.
2. In a shallow greased baking dish, arrange alternating layers of canned spaghetti and seasoned meat, finishing with a spaghetti layer on top.
3. Cover with buttered bread crumbs.
4. Bake at 375°F for approximately 20 minutes, until heated through and crumbs are lightly browned.
