Apple Pan Dowdy
Here's what's cookin' Apple Pan Dowdy Serves
Recipe from the kitchen of
Set the oven at 350°. Butter
a 1½ quart baking dish
Put in the baking dish:
3 cups tart apples, peeled & sliced.
Sprinkle with
½ c molasses or brown sugar
¼ teaspoon nutmeg
¼ t cinnamon
¼ t salt
Bake until the apples are soft.
Back:
Meanwhile prepare
Cottage Pudding batter
Spread it over the apples. Continue
baking until the top is brown & crusty
(about 25 min.)
Serve from the dish or turn out with
the apples on top.
Serve with Hard Sauce or
whipping cream.

What's Cooking
Break up a meeting with this apple torte
Ladies getting together at your house to
plan the year's agenda? Serve this crusty
apple torte—it's not too sweet for a morn-
ing or afternoon meeting, but becomes a
lavish dessert with the addition of vanilla
ice cream.
Ingredients: 4 Tbs. soft butter, 1 cup
sugar, 1 egg, 1 cup flour, 1 t. cinnamon,
½ t. baking powder, ¼ t. soda, ⅛ t. salt.
3 peeled, cored apples cut in lengthwise
slices ⅛″ thick. Cream together butter and
sugar. Add egg and beat until light and
fluffy. Sift together flour, cinnamon, baking
powder, soda and salt, and beat in thor-
oughly. Stir apples into batter, which will
be thick and hard to stir. Turn into but-
tered 9″ pan and spread smooth. Bake at
350° 1 hour. Cool and cut into wedges.
Serve warm. Six servings.

# Apple Torte
*Northwest Woman — "What's Cooking" column by Jane Adams*
*Serves 6*
## Ingredients
- 4 Tbsp soft butter
- 1 cup sugar
- 1 egg
- 1 cup flour
- 1 tsp cinnamon
- 1/2 tsp baking powder
- 1/4 tsp baking soda
- 1/8 tsp salt
- 3 apples, peeled, cored, and cut lengthwise into 1/8-inch thick slices
## Instructions
1. Cream together butter and sugar.
2. Add egg and beat until light and fluffy.
3. Sift together flour, cinnamon, baking powder, baking soda, and salt; beat into the creamed mixture thoroughly.
4. Stir apples into the batter — it will be thick and hard to stir.
5. Turn batter into a buttered 9-inch pan and spread smooth.
6. Bake at 350°F for 1 hour.
7. Cool and cut into wedges. Serve warm. -

Banana Nut Bread
3 Bananas 1/2 C butter
1 C sugar 1 C. nuts
2 C flour 2 eggs
1 t soda
Mash bananas, add sugar & mix well.
Sift flour & soda togeather. Add a little
of the flour 1 egg to the bananas pulp
& beat. Add more flour & other egg.
Beat well & add remaining flour, add
butter & nuts. Place in loaf pan & bake in
moderate oven 350° for 45 min

# Banana Nut Bread

## Ingredients
- 3 bananas
- 1/2 cup butter
- 1 cup sugar
- 1 cup nuts
- 2 cups flour
- 2 eggs
- 1 tsp baking soda
## Instructions
1. Mash bananas, add sugar and mix well.
2. Sift flour and soda together.
3. Add a little of the flour and 1 egg to the banana pulp and beat.
4. Add more flour and the other egg. Beat well.
5. Add remaining flour, then add butter and nuts.
6. Place in a loaf pan and bake in a moderate oven at 350° for 45 minutes. -
Bean Salad
Bean Salad from Tommie Anne Davis
1 can yellow Wax beans drained
1 " green string beans "

# Bean Salad

## Ingredients
### Salad
- 1 can yellow wax beans, drained
- 1 can green string beans, drained
- 1 can garbanzo beans, drained
- 1 can dark red kidney beans, including juice
- 1/4 cup chopped green pepper
- 2 cups celery, thinly sliced
- 1/2 cup sliced onions
### Dressing
- 1 cup sugar
- 1 7/8 cups white vinegar
- 3/4 cup oil
## Instructions
1. Combine all salad vegetables in a large bowl.
2. Mix dressing ingredients (sugar, white vinegar, and oil) together well.
3. Pour dressing over vegetables and stir to combine.
4. Marinate overnight in refrigerator — absolutely necessary to blend flavors.
5. Keeps one month (refrigerated). -

# Bee Pollen Substitute
## Ingredients
- 1 part brewer's yeast
- 3 parts soy flour
- 1 part powdered milk
- 1 part water
- 2 parts sugar syrup
## Instructions
1. Combine brewer's yeast, soy flour, and powdered milk.
2. Mix with 1 part water and 2 parts sugar syrup until the mixture reaches a dough consistency.
3. With the dough, make a cake about the size and shape of your hand.
4. Place the cake on a piece of wax paper and turn it cake-side down on the frame bars, just above the brood nest.
5. Check back in a week.
6. If the bees have eaten most of the cake, give them more each week until the bees can gather enough natural [pollen]. -

2 pounds mature beef, trimmed 6 or more small onions
of bone, fat and most of the 2 stalks celery in 1/4 inch slices
gristle, from chuck, round, shoul- flour
der, arm or rump. 1 tsp. sugar
1/4 pound kidney suet 1/8 tsp. summer savory
6 or more small potatoes, or large 1/8 tsp. sweet basil
ones may be cut in cubes 1/4 tsp. thyme
6 small carrots, or 3 large ones cut 2 to 4 peppercorns
in 1-inch pieces 1 tsp. ground Jamaica ginger
2 tsp. salt

Use a heavy pan provided with a tight cover, preferably a Dutch oven.
Fry the suet at a moderate temperature and remove the cracklings.
Cut the meat in one inch squares about 1½ inches long. Brown care-
fully on all sides in the rendered fat, not letting it get too hot. Dredge meat
with flour, sprinkle with 1 tsp. sugar and brown again. Add one pint of boiling
water, cover tightly, and simmer (no boiling) for one and ½ hours.
Peel the onions, hold them in scalding water for five minutes and drain.
Add to stew with the seasonings and other vegetables and simmer one hour
longer. If necessary more water can be added. If steam escapes, kettle is
too hot.
Taste and correct seasoning before serving.

## Ingredients

# Biscuits

*Makes approximately 6 to 8 biscuits*
## Ingredients
- 1 cup flour, sifted
- 1 1/2 tsp baking powder
- 1/2 tsp salt
- 2 Tbsp shortening
- 1/3 to 1/2 cup milk
## Instructions
1. Preheat oven to 450°F. Lightly grease a baking sheet.
2. Sift together flour, baking powder, and salt into a large bowl.
3. Cut in shortening finely until mixture resembles fine crumbs — finer than coarse crumbs, with no visible pieces of shortening remaining.
4. Stir in milk gradually, adding just enough to form a soft, slightly sticky dough. Do not overmix.
5. Turn dough out onto a lightly floured surface and knead gently 8 to 10 times.
6. Pat or roll to approximately 1/2 inch thickness.
7. Cut into rounds with a floured biscuit cutter.
8. Place on prepared baking sheet with sides just touching for soft sides, or spaced apart for crispier sides.
9. Bake at 450°F for 10 to 12 minutes until risen and golden brown.
10. Split biscuits in half and serve warm. -

## Ingredients
- 1/2 cup butter or margarine
- 1/2 cup vegetable shortening
- 8 cups sifted confectioners' sugar
- 1/2 cup cream
- 1 1/2 Tbsp vanilla
## Instructions
1. Blend butter or margarine and vegetable shortening together gradually.
2. Add 8 cups sifted confectioners' sugar and beat until smooth.
3. Stir in cream and vanilla.
4. Spread between cake layers. -

CAMPBELLED EGGS
1 can Campbell's Cream of Celery, Cream of Chicken,
or Cream of Mushroom Soup*
8 eggs, slightly beaten
Dash pepper
2 tablespoons butter or margarine
In bowl, stir soup until smooth; gradually blend in eggs and pepper. In 10-inch
skillet, melt butter; pour in egg mixture. Cook over low heat; do not stir. As
mixture begins to set around edges, gently lift cooked portions with spatula so
that thin, uncooked portion can flow to the bottom. Continue gently lifting
cooked portions until eggs are completely set, but still moist (about 8 minutes).
4 servings.

or Cream of Potato Soup.

2 C sugar 2½ C flour
1½ C salad oil 3 tsp baking powder
1 tsp soda
3 eggs ½ tsp salt
2 C grated carrots raw 1 tsp cinnamon
1 tsp vanilla
add ½ C nuts
1 8 1/4 oz can crushed pineapple and juice
mix in order. Bake in a 9 x 13 x 2" pan

# Carrot Cake

## Ingredients
### Cake
- 2 cups sugar
- 1 1/2 cups salad oil
- 3 eggs
- 2 cups grated carrots, raw
- 1 tsp vanilla
- 1/2 cup nuts
- 1 (8 3/4 oz) can crushed pineapple with juice
- 2 1/2 cups flour
- 3 tsp baking powder
- 1 tsp baking soda
- 1/2 tsp salt
- 1 tsp cinnamon
### Frosting
- 1/4 cup butter or margarine
- 1 small pkg (3 oz) Philadelphia cream cheese
- 1 1/2 cups powdered sugar
- 1 tsp vanilla
## Instructions
### Cake
1. Mix ingredients together in order as listed.
2. Pour batter into a 9 x 13 x 2-inch pan.
3. Bake at 350°F for 50 minutes.
### Frosting
1. Combine butter or margarine, cream cheese, powdered sugar, and vanilla.
2. Beat until smooth and creamy.
### Assembly
1. Allow cake to cool completely before applying frosting.
2. Spread frosting evenly over the top of the cooled cake. -

## Ingredients
- 2 cups cooked rice (1/2 cup uncooked)
- 2 cups cooked chicken
- 1 cup chopped celery
- 1 can cream of mushroom soup
- 1 can cream of chicken soup
- 2 hard boiled eggs
- 1/4 cup finely chopped onion
## Instructions
1. Sauté the finely chopped onion in butter together with the chopped celery.
2. Put all ingredients in layers in a baking dish.
3. Bake at 350°F for 30 minutes.

- 12 slices bread, crusts removed, cubed (divided: 6 + 6)
- 2 cups sliced/cut-up chicken
- 1 cup sliced celery
- 1 small can mushrooms
- 4 eggs
- 2 cups milk
- 1 cup mayonnaise
- 1 cup cream of chicken soup
- Cheese, if desired
## Instructions
1. Cube 6 slices of bread (crusts removed) and place in the bottom of a baking dish.
2. Cover with 2 cups of sliced, cut-up chicken.
3. Add 1 cup sliced celery and 1 small can of mushrooms.
4. Top with 6 more slices of bread, cubed.
5. Beat 4 eggs into 2 cups of milk, then stir in 1 cup of mayonnaise.
6. Pour egg mixture over all.
7. Let stand overnight.
8. Spread 1 cup of cream of chicken soup over the top; add cheese if desired.
9. Bake at 350°F for 45 minutes.
