- Thin slices white bread, halved
### Instructions
1. Chop watercress very fine.
2. Add 1 or 2 slices crisp bacon, broken in pieces.
3. Blend with a small amount of mayonnaise.
4. Spread on halves of thin slices of white bread and roll.

## Open Face Mushroom Sandwiches
### Ingredients
- 3 Tbsp butter
- 3 Tbsp flour
- 3/4 cup mushroom liquor
- Salt
- Pepper
- 1 1/2 tsp lemon juice
- 1/4 tsp Worcestershire sauce
- Buttered rounds of bread
- Canned mushroom buttons
### Instructions
1. Combine by white sauce method: butter, flour, mushroom liquor, salt, pepper, lemon juice, and Worcestershire sauce.
2. Spread on buttered rounds of bread and top with a canned mushroom button.

An easy and successful way to
shred the potatoes is to use the shredding
attachment on your electric mixer. Lack-
ing this, a hand grater may be used. Mix
together shredded potato, milk, flour, and
salt; spread in greased baking pan or
casserole, large enough so that the mix-
ture will be only about ½-inch thick.
Place pork slices on top and bake for 1
hour uncovered in a moderate oven (350°
F.). Serves six.
1½ quarts (6 cups) raw potatoes,

½ cup flour
2 teaspoons salt
6 thin slices fresh pork

# Potatis Pannkaka (Potato Pancake)
## Ingredients
- 1 1/2 quarts (6 cups) raw potatoes, shredded
- 2 cups milk
- 1/2 cup flour
- 2 tsp salt
- 6 thin slices fresh pork
## Instructions
1. Shred the potatoes using the shredding attachment on an electric mixer, or a hand grater.
2. Mix together the shredded potato, milk, flour, and salt.
3. Spread the mixture in a greased baking pan or casserole, large enough so that the mixture will be only about 1/2-inch thick.
4. Place pork slices on top.
5. Bake uncovered in a moderate oven (350°F) for 1 hour.
6. Serves six. -

2 teaspoons salt
4 eggs, well beaten
5 cups rich milk
Butter, salt, pepper for seasoning
Boil fish in salted water (1 tea-
spoon salt to each quart of water) until
tender, about 45 minutes. Drain, skin
carefully, pick out bones, and flake finely.
Cook rice with water, milk, and salt for
20 minutes. Now put a layer of drained
rice in a well-buttered casserole. Then
add a layer of the flaked fish. Season
with butter, pepper, and salt, allowing
about 1/2 teaspoon of salt for every layer.
Continue with alternate layers of fish and
rice until casserole is two thirds full. To well-beaten eggs add milk. Pour over
rice and fish. Bake uncovered for 1 hour in a medium oven (350° F.). Serves 12.

## Ingredients
- 1 small haddock or cod (about 5 pounds)
- 3/4 cup rice
- 2 cups water
- 2 cups milk
- 2 teaspoons salt
- 4 eggs, well beaten
- 5 cups rich milk
- Butter, salt, pepper for seasoning
## Instructions
1. Boil fish in salted water (1 teaspoon salt to each quart of water) until tender, about 45 minutes.
2. Drain, skin carefully, pick out bones, and flake finely.
3. Cook rice with water, milk, and salt for 20 minutes.
4. Put a layer of drained rice in a well-buttered casserole.
5. Add a layer of the flaked fish. Season with butter, pepper, and salt, allowing about 1/2 teaspoon of salt for every layer.
6. Continue with alternate layers of fish and rice until casserole is two thirds full.
7. To well-beaten eggs add milk. Pour over rice and fish.

- 1/2 pound fresh pork
- Salt and pepper to taste
## Instructions
1. Cut pork into small, thin pieces and fry slightly in a large baking pan.
2. Remove pork from pan.
3. Sift together flour, sugar, salt, and baking powder.
4. Add beaten egg to milk, then blend with dry ingredients.
5. Add the batter to the grease remaining in the baking pan.
6. Season pork lightly with salt and pepper and place on top of the batter.
7. Bake uncovered in a moderate oven (350°F) for about an hour.

## Ingredients
- 1 cup granulated sugar
- 3/4 cup brown sugar
- 1/2 cup Crisco
- salt
- 3 cups pastry flour
- 1 1/2 Tbsp molasses
- 1 tsp ginger
- 3 eggs
- 1 tsp cinnamon
- 1 1/4 tsp baking soda
## Instructions
1. Scale all ingredients in mixing bowl and mix to a smooth dough.
2. Bake at 350°F.

## Ingredients
- 1 cup shortening (Spry and butter)
- 3/4 cup sugar
- 1 unbeaten egg
- 2 1/4 cups flour
- 1/2 tsp baking powder
- Dash salt
- Vanilla or almond flavoring
## Variations
- 2 squares chocolate, added to above
- Nuts
- For larger cookies: when you add egg, also add 3/4 cup molasses
- 1 tsp cinnamon
- 1 tsp ginger
- 1/3 tsp cloves
- 1/2 tsp soda
- For another change: add peanut butter
## Instructions
1. Cream sugar and shortening together.
2. Add 1 unbeaten egg; beat well. Do not stir.
3. Sift together flour, baking powder, salt, and spices (if using).
4. Combine wet and dry ingredients.
5. Add vanilla or almond flavoring.
6. If using chocolate variation, add 2 squares chocolate and nuts to above mixture.
7. If making larger cookies, add 3/4 cup molasses when adding the egg.
8. For peanut butter variation, add peanut butter to mixture. -

## Ingredients
- 1 pkg Royal Pineapple Jello
- 1 can crushed pineapple
- Whipped cream
## Instructions
1. Jell Jello until just set.
2. Add crushed pineapple and whipped cream.
3. Then let set to chill. -

nut meats. Fold in stiffly beaten egg whites. Spread over baked mi
mixture and return to moderatly hot oven for 25 minutes.
While hot. cut in squares and dust with conf. sugar.

## Ingredients
- 3/4 cup butter
- 3 Tbsp granulated sugar
- 1 1/2 cups flour
- 3 eggs
- 2 1/4 cups brown sugar
- 3/4 cup coconut
- 1 cup nut meats, chopped
- Confectioners' sugar (for dusting)
## Instructions
1. Cream butter, add granulated sugar and beat well.
2. Blend in flour to form a smooth dough.
3. Pat out in a greased square or oblong pan.
4. Bake in a moderately hot oven about 15 minutes.
5. In the meantime, separate eggs and beat egg yolks until thick.
6. Gradually add brown sugar, beating constantly.
7. Add coconut and nut meats.
8. Fold in stiffly beaten egg whites.
9. Spread mixture over baked base and return to moderately hot oven for 25 minutes.
10. While hot, cut in squares and dust with confectioners' sugar. -

1 cup rich milk, 1 cup sifted flour,

warm water, one cup brown sugar, two
teaspoons butter, one tablespoon corn-
starch. Mix this well, and boil for five
minutes. Grease a casserole. Pour in
syrup first, and then the batter over it.

## Ingredients
- 2 Tbsp margarine
- 1/2 cup white sugar
- 1 cup rich milk
- 1 cup sifted flour
- 2 tsp baking powder
- 1/2 tsp salt
- 1/2 cup raisins (or dates)
- 1/4 cup chopped walnuts
## Syrup
- 2 cups lukewarm water
- 1 cup brown sugar
- 2 tsp butter
- 1 Tbsp cornstarch
## Instructions
1. Cream 2 Tbsp margarine with 1/2 cup white sugar.
2. Add 1 cup rich milk, 1 cup sifted flour, 2 tsp baking powder, 1/2 tsp salt, 1/2 cup raisins, and 1/4 cup chopped walnuts. Mix to form a batter.
3. Make the syrup: combine 2 cups lukewarm water, 1 cup brown sugar, 2 tsp butter, and 1 Tbsp cornstarch. Mix well and boil for five minutes.
4. Grease a casserole dish.
5. Pour the syrup into the casserole first, then pour the batter over it.
6. Bake for one hour at 350°F. -

## Ingredients
- 1 pkg lemon Jello
- 1 cup boiling water
- 1 small can crushed pineapple
- 1 small can cranberry sauce
- 1 cup nuts
## Instructions
1. Dissolve Jello in 1 cup boiling water.
2. Chill until beginning to set.
3. Add crushed pineapple and cranberry sauce.
4. Add nuts.
5. Chill until set. Serve as salad or with whipped topping. -

## Ingredients
- 1 cup flour
- 4 tsp baking powder
- 1/2 tsp salt
- 1 Tbsp sugar
- 3 Tbsp butter
- 1 egg, well beaten in 1/2 cup milk
## Instructions (Inferred)
1. Combine flour, baking powder, salt, and sugar.
2. Cut in butter until the mixture resembles coarse crumbs.
3. Add the well-beaten egg and milk mixture, stirring just until combined.
4. Turn out onto a greased baking sheet or into a greased pan, or drop in mounds for individual shortcakes.
5. Bake at 450°F for 12–15 minutes, until golden.
6. Split while warm and serve with fruit and cream.
