# Sour Milk Pancakes
*Makes approximately 10 to 12 pancakes*
## Ingredients
- 1 1/4 cups flour, sifted
- 1 1/2 tsp baking soda
- 1 tsp baking powder
- 2 Tbsp sugar
- 1/2 tsp salt
- 1 egg
- 1 cup sour milk
- 2 Tbsp butter, margarine, or shortening, melted
## Instructions
1. Sift together flour, baking soda, baking powder, sugar, and salt into a large bowl.
2. Beat egg until thick; add sour milk and melted fat and stir to combine.
3. Make a well in the center of the flour mixture; pour in the egg and milk mixture.
4. Stir just until combined — batter will be slightly lumpy; do not overmix.
5. Heat griddle slowly over medium heat until a drop of water skitters across the surface.
6. Lightly grease griddle with butter or shortening.
7. Pour approximately 1/4 cup batter per pancake onto the griddle.
8. Cook until bubbles form across the surface and edges look set — approximately 2 to 3 minutes.
9. Flip and cook until golden brown on the second side — approximately 1 to 2 minutes.
10. Serve immediately. -

# Orange Cookies
## Ingredients
### Cookies
- 1 1/2 cups brown sugar
- 3/4 cup shortening
- 2 eggs
- 1 tsp grated orange rind
- 1/2 tsp salt
- 1 1/2 tsp baking powder
- 1 tsp baking soda
- 1/2 cup liquid (1/2 sour milk + 1/2 orange juice)
- 1 tsp vanilla
- 2 3/4 cups flour (no more)
### Frosting
- 1 1/2 tsp grated orange rind
- 1 1/2 cups powdered sugar
- 1 tsp butter
- 1 1/3 cups orange juice
## Instructions
### Cookies
1. Cream together brown sugar and shortening.
2. Beat in eggs, grated orange rind, and vanilla.
3. Mix in salt, baking powder, and baking soda.
4. Add the liquid (sour milk and orange juice combined) alternately with flour. Use no more than 2 3/4 cups flour.
5. Drop or shape cookies and bake until done.
### Frosting
1. Combine powdered sugar, grated orange rind, butter, and enough orange juice to reach a spreadable consistency.
2. Spread or drizzle over cooled cookies. -
Rhubarb Coffee Cake
Rhubarb Coffee Cake
½ c butter 1 c sour milk or buttermilk
1½ c sugar 2 c rhubarb, chopped
1 egg, beaten 1 tsp vanilla
2 c flour ½ c sugar
1 tsp soda ½ tsp cinnamon
½ tsp salt
Cream shortening and sugar; add egg. Sift flour, soda &
salt and add alternately with sour milk. Gently blend
in rhubarb and vanilla. Pour into 9 bu 13-inch baking
pan. Sprinkle top with ½ cup sugar and ½ tsp cinnamon.
Bake at 350 degrees for 45 to 50 minutes. Yield about
12 servings. (To turn milk sour, add t T of lemon
juice or vinegar to 1 cup milk.)

## Ingredients
- 1/2 cup butter
- 1 1/2 cups sugar
- 1 egg, beaten
- 2 cups flour
- 1 tsp baking soda
- 1/2 tsp salt
- 1 cup sour milk or buttermilk
- 2 cups rhubarb, chopped
- 1 tsp vanilla
## Topping
- 1/2 cup sugar
- 1/2 tsp cinnamon
## Instructions
1. Cream butter and sugar; add egg.
2. Sift flour, soda, and salt and add alternately with sour milk.
3. Gently blend in rhubarb and vanilla.
4. Pour into a 9 by 13-inch baking pan.
5. Sprinkle top with 1/2 cup sugar and 1/2 tsp cinnamon.
6. Bake at 350 degrees for 45 to 50 minutes.
7. Yields about 12 servings.
8. To turn milk sour, add 1 Tbsp of lemon juice or vinegar to 1 cup milk. -

- 4 Tbsp cocoa dissolved in 1/2 cup boiling water
- 1/2 cup sour milk with 1 tsp soda in it
- 2 cups flour
- 1/2 tsp salt
## Instructions
1. Combine sugar and shortening.
2. Add eggs and mix well.
3. Dissolve cocoa in boiling water and add to mixture.
4. Add sour milk with soda mixed in.
5. Add flour and salt; mix until combined.

# Banana Cake

## Ingredients
- 1 1/2 cups sugar
- 2 eggs
- 1/2 cup butter and lard, melted, scant
- 1/2 cup sour milk
- 1 tsp baking soda
- 2 cups flour
- 2 level tsp baking powder
- 3 bananas, mashed
- 1/2 cup walnuts
## Instructions
1. Cream together sugar and eggs.
2. Add scant 1/2 cup melted butter and lard; mix well.
3. Combine sour milk and baking soda; add to mixture.
4. Stir in flour and baking powder.
5. Fold in mashed bananas and walnuts.
6. Bake at 350°F for approximately 45 minutes. -

# Chocolate Cake

## Ingredients
- 2 Tbsp butter
- 2 Tbsp lard (or substitute 1/4 cup shortening for both)
- 3 Tbsp cocoa
- 1 cup sugar
- 1/2 tsp salt
- 1 tsp baking soda
- 2 cups flour
- 1 egg, beaten
- 1 cup sour milk
- 1 tsp vanilla
## Instructions
1. Combine butter, lard, and cocoa in a small saucepan over low heat; melt together, stirring until smooth. Set aside to cool slightly.
2. In a large bowl, combine sugar, salt, baking soda, and flour; mix well.
3. Add the melted butter and cocoa mixture to the dry ingredients and stir to combine.
4. Add beaten egg, sour milk, and vanilla last.
5. Beat well until smooth and fully combined.
6. Pour into a greased and floured 8x8 or 9x9 pan.
7. Bake at 350°F for 30-35 minutes, or until a toothpick inserted in the center comes out clean.
8. Cool completely before frosting. -

# Spice Cake

## Ingredients
- 1 cup sugar
- 1/2 cup butter, lard, or combination (see Editor's Notes)
- 1 egg
- 1 tsp baking soda
- 1 1/2 cups flour, measured before sifting
- 1/2 tsp cinnamon
- 1/4 tsp cloves
- 1/4 tsp nutmeg
- 3/4 cup sour milk (or buttermilk)
## Topping
- Powdered sugar frosting (see below)
- Chopped nuts
## Instructions
1. Cream sugar and butter or lard together until light and fluffy.
2. Break egg directly onto creamed mixture and stir together well.
3. Sift baking soda, flour, cinnamon, cloves, and nutmeg together.
4. Add sifted dry ingredients to creamed mixture alternately with sour milk, beginning and ending with flour.
5. Pour into a greased and floured 8x8 or 9x9 pan.
6. Bake at 350°F for 30-35 minutes, or until a toothpick inserted in the center comes out clean.
7. Cool completely before frosting.
8. Spread powdered sugar frosting over cooled cake and sprinkle with chopped nuts.
## Powdered Sugar Frosting
### Ingredients
- 1 1/2 cups powdered sugar
- 2 Tbsp butter, softened
- 2-3 Tbsp milk
- 1/2 tsp vanilla
### Instructions
1. Cream butter and powdered sugar together.
2. Add milk a tablespoon at a time until spreading consistency is reached.
3. Stir in vanilla. -

Here is the recipe for the way
I make my bread, Kristina. But
remember that your Grandma can
make just as good bread as I do.
Some times I get it so very good
& some times not so good.
White Bread
In the evening I scald 1½ cups
sour milk & then put salt & 1c cold
water in, & set away untill luke
warm. Then soak 1 yeast in ½ cup
luke warm water, & 1 teaspoon sugar
I use red star yeast, or Maca yeast
I like it best, but can't get it now.
Then mix yeast & the sour milk, &
beat in flour in untill you can't beat
it any more, then put more flour
in & knead until you think it
right for putting in pans.
Then in morning put in pans
& let rise, & then bake.
Now you can make it any time you
want to, but I like it this way,
because then I can get it baked in
the morning.
Dark Bread
In the evening scald 1½ cup sour
milk, then put 1 cup cold water in, & set
set away till luke warm.
Then soak 1 yeast in ½ cup luke
warm water, & 1 teaspoon sugar.
Then mix yeast & sour milk, & beat
in enough Rye Graham flour (Pumpernickle

get it) till you can't beat it
any more. Then in morning
knead enough white flour in, so
its right to put in pans.
Put in pans, & put in oven
right away, & bake. Do not let
it rise in pans.

- Salt
- 1 cup cold water
- 1 yeast cake (Red Star yeast, or Maca yeast)
- 1/2 cup luke warm water
- 1 teaspoon sugar
- Flour (as much as needed)
## White Bread Instructions
1. In the evening, scald 1 1/2 cups sour milk, then put salt and 1 cup cold water in, and set away until luke warm.
2. Soak 1 yeast in 1/2 cup luke warm water with 1 teaspoon sugar.
3. Mix yeast and the sour milk, and beat in flour until you can't beat it any more.
4. Put more flour in and knead until right for putting in pans.
5. In the morning, put in pans and let rise, then bake.
## Dark Bread Ingredients
- 1 1/2 cups sour milk
- 1 cup cold water
