Pumpkin Bread
Pumpkin Bread
3 loaves
3 c. sugar 1 tsp. nutmeg
1 c. salad oil 3½ c. flour
4 eggs 2 tsp. soda
1½ tsp. salt 2 c. pumpkin
1 tsp. cinnamon 2/3 c. water
Place all ingredients in a large mixing bowl.
Mix thoroughly. Divide batter between 3 loaf
pans that have been greased and floured.
Bake 350° oven for 1 hr. or until done. Freezes
well. 1 c. nuts may be added.

# Pumpkin Bread
*Makes 3 loaves*
## Ingredients
- 3 cups sugar
- 1 cup salad oil
- 4 eggs
- 1 1/2 tsp salt
- 1 tsp cinnamon
- 1 tsp nutmeg
- 3 1/2 cups flour
- 2 tsp baking soda
- 2 cups pumpkin
- 2/3 cup water
- 1 cup nuts (optional)
## Instructions
1. Place all ingredients in a large mixing bowl.
2. Mix thoroughly.
3. Divide batter between 3 loaf pans that have been greased and floured.
4. Bake in a 350°F oven for 1 hour, or until done.
5. Freezes well. -
Pumpkin Muffins
PUMPKIN MUFFINS
2 eggs
¾ cup brown sugar, firmly packed
1 cup cooked, sieved pumpkin
¼ cup milk
4 tablespoons melted butter or margarine
2 cups sifted all-purpose flour
½ teaspoon salt
½ teaspoon soda
1½ teaspoons baking powder
½ teaspoon ginger
½ teaspoon cinnamon
1 2 teaspoon nutmeg
½ cup coarsely chopped nuts (optional)
½ cup coarsely chopped raisins (optional)
Beat eggs in mixing bowl. Beat in sugar until light and
fluffy. Stir in pumpkin, milk and melted butter or marga-
rine. Sift flour with dry ingredients and stir in with
raisins and nuts, if desired, stirring just enough to mois-
ten flour. Do not beat or overstir.
Fill greased muffin pans ½ full or use fluted paper
cupcake containers set in muffin pans. Bake at 375 de-
grees for about 15 minutes or until muffins test done
when pressed lightly on top with finger tip. Yields about
18 medium-size muffins.

- 1/2 cup coarsely chopped nuts (optional)
- 1/2 cup coarsely chopped raisins (optional)
## Instructions
1. Beat eggs in mixing bowl. Beat in sugar until light and fluffy.
2. Stir in pumpkin, milk, and melted butter or margarine.
3. Sift flour with dry ingredients and stir in with raisins and nuts, if desired, stirring just enough to moisten flour. Do not beat or overstir.
4. Fill greased muffin pans 1/2 full or use fluted paper cupcake containers set in muffin pans.
5. Bake at 375 degrees for about 15 minutes or until muffins test done when pressed lightly on top with finger tip.
6. Yields about 18 medium-size muffins. -

- 1 tsp sea salt

- 1 cup solid pack pumpkin or cooked pumpkin puree

½ teaspoon nutmeg
½ teaspoon vanilla
¼ teaspoon ginger
Blend together all ingredients. Pour into walnut pie crust. Bake in 450° oven for
15 minutes. Reduce to 350° for approximately 40 more minutes, or until
firmly set.

Stir in

1/4 " cloves
mix good & stir 1 minute
1/2 cup nuts
Pour in greased bread pan
Bake 350 to 55 Until well done
Remove from pan let stand 10 minutes
then remove from pan

# Pumpkin Bread

## Ingredients
- 1 cup brown sugar
- 1/3 cup shortening
- 2 eggs
- 1 cup pumpkin
- 1/4 cup milk
- 2 cups flour
- 2 tsp baking powder
- 1/2 tsp salt
- 1/4 tsp baking soda
- 1/2 tsp ginger
- 1/4 tsp cloves
- 1/2 cup nuts
## Instructions
1. Cream brown sugar and shortening together well.
2. Add 2 eggs, one at a time, beating well after each addition.
3. Stir in 1 cup pumpkin.
4. Stir in 1/4 cup milk.
5. Combine flour, baking powder, salt, baking soda, ginger, and cloves; mix into batter and stir 1 minute.
6. Stir in nuts.
7. Pour into a greased bread pan.
8. Bake at 350°F for 55 minutes until well done.
9. Remove from oven, let stand 10 minutes, then remove from pan. -

- 3 cups sugar
- 1/2 tsp baking powder
- 2 tsp baking soda
- 1 1/2 tsp salt
- 1 tsp cloves
- 1 tsp cinnamon
- 1 tsp nutmeg
- 3 1/2 cups flour
- 1 cup salad oil
- 2 cups pumpkin
## Ingredients (Smaller Batch — Back of Card)
- 1 1/2 cups sugar
- 1/2 cup cooking oil
- 2 eggs
- 1 cup pumpkin
- 1 3/4 cups flour
- 1/4 tsp baking powder
- 1 tsp baking soda
- 1 tsp salt
- 1/2 tsp cloves
- 1/2 tsp cinnamon
- 1/2 tsp nutmeg
- 1/2 tsp allspice
- 1/3 cup water
- 1/2 cup raisins
## Instructions
1. Combine all dry ingredients.
2. Mix in oil, pumpkin, and remaining wet ingredients until combined.
3. Pour into loaf pans. Large batch: bake at 325°, 2 large loaves approx. 1 hr or 4 small loaves 1 hr.
4. Smaller batch: bake at 350° for one hour. -

2. Add flour, baking powder, baking soda, salt, cinnamon, and cloves. Mix to combine.
