1 t. parsley flakes 1/2 t. salt
1/2 t. leaf thyme crumbled 1/4 t. pepper
Heat bread crumbs in shallow pan at
350° for 5-10 minutes or until dry.
Combine with onions parsley, thyme
sage, salt & pepper in a large bowl.
Cover & store at room temperature.
This keeps for weeks.

# Instant Stuffing
## Ingredients
- 4 cups large bread crumbs or pieces
- 1 tsp instant minced onion
- 1/4 tsp leaf sage, crumbled
- 1 tsp parsley flakes
- 1/2 tsp salt
- 1/2 tsp leaf thyme, crumbled
- 1/4 tsp pepper
### To Use (per batch)
- 3 Tbsp butter
- 1/2 cup to 3/4 cup chicken broth
### Optional Add-ins
- 1/4 cup minced celery, or
- 1/4 cup chopped nuts, or
- 2 Tbsp sesame seeds
## Instructions
### Making the Mix
1. Heat bread crumbs in a shallow pan at 350°F for 5–10 minutes, or until dry.
2. Combine dried crumbs with onion, parsley, thyme, sage, salt, and pepper in a large bowl.
3. Cover and store at room temperature. This keeps for weeks.
### To Use
1. Melt 3 Tbsp butter and stir into the crumb mixture in a large bowl.
2. Add 1/2 cup to 3/4 cup chicken broth, stirring gently.
3. Place in a 4-cup baking dish; cover.
4. Bake at 350°F for 30 minutes, adding more broth if necessary.
5. If desired, vary the recipe by adding 1/4 cup minced celery, 1/4 cup chopped nuts, or 2 tablespoons sesame seeds. -

BREAD CRUMB TORTE
4 egg yolks

1/2 tsp. baking powder
4 egg whites

Beat egg yolks till light and lemon colored. Add sugar gradually and beat till light. Mix bread crumbs, nuts and baking powder. Add to egg yolks mixture. Fold in flavoring and stiffly beaten egg whites.
Pour into 2 well-greased and floured 8-inch layer pans and bake 20 minutes in a moderate oven, 350 degrees F. Serve with a lemon custard or nut mustard.

Torte means cake. And it seems to include just about every kind of cake that's baked. This crumb torte comes closest to being a torte in the strictest sense of the word. But it omits the spices.

## Ingredients

- Almond flavoring

2. Add sugar gradually and beat till light.
3. Mix bread crumbs, nuts, and baking powder.
4. Add to egg yolks mixture.
5. Fold in flavoring and stiffly beaten egg whites.
6. Pour into 2 well-greased and floured 8-inch layer pans.
7. Bake 20 minutes in a moderate oven, 350°F.

SESAME HALIBUT STEAKS
2 halibut steaks, 1 to 1½ inches
thick
⅓ cup melted butter
Dash garlic salt
2 cups soft bread crumbs
1 teaspoon garlic salt
⅛ teaspoon seasoned pepper
2 tablespoons toasted sesame
seeds
Brush the halibut with some of the
melted butter and arrange in a shallow
baking dish. Sprinkle with garlic salt.
Combine the balance of melted butter
with bread crumbs, garlic salt, seasoned
pepper, and sesame seeds. Mound half of
mixture on each piece of halibut. Bake in
a 350 degrees uncovered, until fish flakes
easily with a fork, approximately 25 to 30
minutes. Yields 2 servings.

# Stuffed Zucchini
## Ingredients
- 6 small, unpeeled zucchini
- Butter, for dotting
- Grated Parmesan cheese, for dusting
## Salami Stuffing
- 2 cups soft bread crumbs
- 2 Tbsp melted butter
- 1/2 cup finely chopped salami
- 1 egg, slightly beaten
- 1 Tbsp water
- 1/4 cup chopped onion
- 1 Tbsp chopped parsley
- 1/2 tsp poultry seasoning
- 1/4 tsp salt
- 1/8 tsp pepper
## Instructions
1. Cut 6 small, unpeeled zucchini in half lengthwise. Wash; scoop out seeds to form "boats."
2. Boil 3 minutes in salted water to cover; drain.
3. Combine all salami stuffing ingredients and mix together.
4. Fill zucchini boats with salami stuffing.
5. Dot with butter; dust top with grated Parmesan cheese.
6. Place in a lightly greased baking dish.
7. Bake until barely tender, 25 to 30 minutes, in a 375-degree oven.
8. Makes 6 servings. -

- 2/3 c milk
- 1 1/4 tsp salt
- 1/8 tsp pepper
- 2 c soft bread crumbs
- 2 Tbsp butter

2. Butter crumbs and put a layer in bottom of baking dish.
3. Add a layer of corn and continue with a layer of each, topping with crumbs.
4. Bake uncovered in hot oven at 400°F for 45 min or till crumbs are brown. -

1 medium eggplant
1 egg
¼ cup milk
1 tablespoon corn oil
1 teaspoon salt
Flour
1½ cups fine dry bread crumbs
Oil for frying

Beat egg slightly, then mix in milk, 1 tablespoon oil and
salt. Dip eggplant into flour, then into egg mixture. Drain
well. Roll in bread crumbs, coating each piece complete-
ly. Pour corn oil into skillet to depth of ¼ inch. Heat over
medium heat. Fry eggplant in hot oil, turning once, until
golden brown, 2 to 3 minutes on each side. Drain on
paper towels. Yields 6 servings.

- 2 cups fresh bread crumbs (fresh, dried & crumbled, or cut into 1/2" cubes)
- 1/2 bay leaf
- 2 whole cloves
- 2 Tbsp sugar
- 2 tsp salt
- 1/8 tsp pepper
- 2–3 Tbsp fat (butter)
## Instructions
1. Peel fresh tomatoes, cut in pieces, and cook till soft.
2. Add seasonings to canned or cooked tomatoes and boil 5 minutes.
3. Remove bay leaf and cloves.
4. Put alternate layers of bread crumbs and tomatoes in a buttered baking dish.
5. Pour the melted butter over it.
6. Cook in a moderate oven about 10–15 minutes. -
Applesauce Bread Pudding
Applesauce Bread Pudding
5 cups of soft bread crumbs
3 cups of scalded milk
1 cup of applesauce
1 cup of sugar, 3 eggs
1/2 cup of Butter or Margarine
1 Teaspoon of cinnamon.
1/2 " " " nutmeg
1/2 " " " vanilla
Preheat oven to 325°F.
Soak bread crumbs in milk
Add remaining ingredients, mix
until well blended. Spoon the
applesauce mixture into greased
2 quart baking dish. Bake 1 1/2 hour
or until knife inserted 1 inch from
edge comes out clean. Serve hot or
cold. Put raisins if you like. Crushed
pine apple may be used in place
of applesauce

- 1 cup applesauce
- 1 cup sugar
- 3 eggs
- 1/2 cup butter or margarine
- 1 tsp cinnamon
- 1/2 tsp nutmeg
- 1/2 tsp vanilla
## Instructions
1. Preheat oven to 325°F.
2. Soak bread crumbs in milk.
3. Add remaining ingredients and mix until well blended.
4. Spoon the applesauce mixture into a greased 2 quart baking dish.
5. Bake 1 1/2 hours or until a knife inserted 1 inch from the edge comes out clean.
6. Serve hot or cold. Raisins may be added if desired. Crushed pineapple may be used in place of applesauce. -

# Meat Loaf (Every Day)
## Ingredients
- 1 1/2 lbs hamburger
- 2 eggs
- 2/3 cup bread crumbs
- 3/4 tsp salt
- Dash pepper
- 3/4 cup milk
- 2 Tbsp onion
- 1/2 tsp sage
- Small can evaporated milk
## Sauce
- 1/4 cup catsup
- 2 Tbsp brown sugar
- 1 tsp mustard
## Instructions
1. Combine hamburger, eggs, bread crumbs, salt, pepper, milk, onion, sage, and evaporated milk; mix well.
2. Shape into a loaf.
3. Mix together catsup, brown sugar, and mustard for the sauce.
4. Spread sauce over top of meat loaf.
5. Bake until cooked through. -

1 cup spaghetti broken in 2" pieces
1½ cups scalded milk
1 cup soft bread crumbs (no crusts)
¼ cup melted butter
1 pimento chopped
1 tbsp parsley chopped (or ½ tbsp dried leaves)
1 tbsp onion chopped fine
1½ cups grated American Cheese
3/8 tsp salt dash paprika
½ tsp pepper 3 eggs well beaten
over
Back:
Cook spaghetti in salted boiling
water until tender. Drain well and
blanch with cold water. Add milk,
bread crumbs & butter. Mix well. Add
remaining ingredients & mix well. Pour
into well buttered casserole. Bake in slow
oven 325° for 50 min. (sometimes 60)
Freezes well & also reheats.

- 1 1/2 cups scalded milk
- 1 cup soft bread crumbs (no crusts)
- 1/4 cup melted butter
- 1 (jarred) pimento, chopped
- 1 Tbsp parsley, chopped (or 1/2 Tbsp dried leaves)
- 1 Tbsp onion, chopped fine
- 1 1/2 cups grated American cheese
- 3/8 tsp salt
- Dash paprika
- 1/2 tsp pepper
- 3 eggs, well beaten
## Instructions
1. Cook spaghetti in salted boiling water until tender. Drain well and blanch with cold water.
2. Add milk, bread crumbs, and butter. Mix well.
3. Add remaining ingredients and mix well.
4. Pour into a well buttered casserole.
5. Bake in a slow oven at 325° for 50 minutes (sometimes 60).
