PUMPKIN PIE
1½ cup mashed cooked pumpkin
½ teaspoon sea salt
1 cup milk
2 beaten eggs
½ cup molasses
2 tablespoons raw sugar
½ teaspoon cinnamon
½ teaspoon nutmeg
½ teaspoon vanilla
¼ teaspoon ginger
Blend together all ingredients. Pour into walnut pie crust. Bake in 450° oven for
15 minutes. Reduce to 350° for approximately 40 more minutes, or until
firmly set.

## Ingredients

# Swedish Tea Rolls
## Ingredients
- 1/2 cup shortening
- 2/3 cup about milk
- 1/3 cup sugar
- 1 tsp cinnamon
- 2 cups sifted flour
- 2 tsp Calumet (baking powder)
- 1/2 tsp salt
- Additional sugar and cinnamon mixture (for coating)
- Butter (for dotting)
## Instructions
1. Combine flour, Calumet, and salt as usual for biscuits.
2. Cut in shortening, then add milk to form dough.
3. Cut dough into 3-inch squares.
4. Fold each square in half and press into a mixture of sugar and cinnamon.
5. Sprinkle thickly with more sugar and cinnamon mixture.
6. Dot with butter.
7. Bake in a hot oven at 450°F for 15 minutes.
8. Makes 10 to 12 rolls. -

## Ingredients
- 1 cup butter
- 1 cup sugar

- 1 1/2 big cups rolled oats
- 1 1/2 cups flour
- 4 Tbsp sweet milk

- 1 tsp nutmeg
- 1 tsp cassia or cinnamon
- 1/4 tsp salt
- 1/2 cup raisins
- 1/2 cup nuts

1. Cream butter and sugar together.
2. Add eggs and mix.

# Sausage Plate with Fried Apples
## Ingredients
- 1 pound link sausages
- 4 apples, peeled, cored, and sliced
- 1 tablespoon sugar
- 1/2 tsp ground cinnamon
- 3 Tbsp sausage fat (reserved from cooking)
## Instructions
1. Prick the skin of sausages. Place on a rack in a broiler pan. Cook until done, about 12 minutes.
2. Sprinkle sliced apples with sugar and cinnamon mixed.
3. Fry apples in 3 Tbsp sausage fat until apples are golden.
4. Serve sausage in center of platter. Pile sautéed apples in a ring around them. -

## Ingredients
- Bananas
- A little melted butter
- A few drops of lemon juice
- Freshly made squares of toast
- 3 Tbsp sugar
- 1 tsp cinnamon
## Instructions
1. Mash bananas with a fork.
2. Mix with a little melted butter and a few drops of lemon juice.
3. Spread on freshly made squares of toast.
4. Sprinkle with a mixture of cinnamon and sugar (3 Tbsp sugar to 1 tsp cinnamon).
5. Place under a moderate broiler flame until the sugar melts.
6. Serve hot.

- Quantities intentionally unspecified; scale banana count to number of servings. Approximately 1 banana per 2 servings as a tea time accompaniment. -

Frosted coconut Ginger bread
1 egg.
1/2 cup sugar
2 cup sifted flour 1 egg well beaten
1 teasp. Calumet 1 egg well beaten
1/2 " soda 2/3 cup molasses
2 " ginger 3/4 " sour milk
1 " cinnamon 1/3 cup sugar
1/2 " salt 1 egg white stiffly
1/3 cup shortening 1 can Baker's coconut
sift flour, measure add dry ingedients
cream shortening add sugar. and cream together
Back:

Bake in 8x8x2- pan in moderate oven. 325-
20 minutes. then increase heat slightly to 350

# Frosted Coconut Gingerbread
## Ingredients
### Gingerbread
- 2 cups flour, sifted
- 1 tsp Calumet baking powder
- 1/2 tsp baking soda
- 2 tsp ginger
- 1 tsp cinnamon
- 1/2 tsp salt
- 1/3 cup shortening
- 1/2 cup sugar
- 1 egg, well beaten
- 2/3 cup molasses
- 3/4 cup sour milk
### Coconut Meringue Topping
- 1 egg white, stiffly beaten
- 1/3 cup sugar
- 1 can Baker's Angel Flake coconut (3 1/2 oz / approximately 1 1/3 to 1 1/2 cups)
## Instructions
### Gingerbread
1. Preheat oven to 325°F. Grease an 8x8x2 pan.
2. Sift flour, then measure. Add baking powder, baking soda, ginger, cinnamon, and salt; sift together.
3. Cream shortening and sugar together until light and fluffy.
4. Add beaten egg and molasses to creamed mixture; mix well.
5. Add flour mixture alternately with sour milk, beginning and ending with flour. Beat until smooth.
6. Pour into prepared pan.
7. Bake at 325°F for 20 minutes, then increase heat to 350°F and bake an additional 20 minutes or until nearly done.
### Coconut Meringue Topping
8. Beat egg white to stiff peaks.
9. Fold sugar into beaten egg white until just combined.
10. Spread meringue evenly over gingerbread approximately 10 minutes before removing from oven.
11. Sprinkle coconut generously over meringue.
12. Return to oven and bake until coconut is lightly toasted and meringue is set, approximately 10 minutes.
13. Cool in pan before cutting.
## Editor's Notes
- **"1 can Baker's coconut"** — Baker's Angel Flake Coconut was the dominant retail coconut product of the era. Standard baking can was 3 1/2 oz, yielding approximately 1 1/3 to 1 1/2 cups loosely packed. -

# Soft Molasses Cookies

## Ingredients
- 2 level tsp baking soda
- 1/2 cup molasses
- 1/4 cup butter + 1/4 lard, melted (or margarine)
- 1 egg
- 1/2 cup sugar
- 2 Tbsp water
- 1 Tbsp vinegar
- 2 1/4 cups flour
- Cinnamon
- Ginger
## Instructions
1. Combine 2 level tsp baking soda into 1/2 cup molasses. Let foam for a few minutes.
2. Melt 1/4 cup butter and 1/4 lard together (or use margarine).
3. Beat 1 egg, then add 1/2 cup sugar.
4. Mix together, then add 2 Tbsp water and 1 Tbsp vinegar.
5. Stir in 2 1/4 cups flour, cinnamon, and ginger.
6. Bake at 360°F for 10–12 minutes. -

# Spice Cake

## Ingredients
- 1 cup sugar
- 1/2 cup butter, lard, or combination (see Editor's Notes)
- 1 egg
- 1 tsp baking soda
- 1 1/2 cups flour, measured before sifting
- 1/2 tsp cinnamon
- 1/4 tsp cloves
- 1/4 tsp nutmeg
- 3/4 cup sour milk (or buttermilk)
## Topping
- Powdered sugar frosting (see below)
- Chopped nuts
## Instructions
1. Cream sugar and butter or lard together until light and fluffy.
2. Break egg directly onto creamed mixture and stir together well.
3. Sift baking soda, flour, cinnamon, cloves, and nutmeg together.
4. Add sifted dry ingredients to creamed mixture alternately with sour milk, beginning and ending with flour.
5. Pour into a greased and floured 8x8 or 9x9 pan.
6. Bake at 350°F for 30-35 minutes, or until a toothpick inserted in the center comes out clean.
7. Cool completely before frosting.
8. Spread powdered sugar frosting over cooled cake and sprinkle with chopped nuts.
## Powdered Sugar Frosting
### Ingredients
- 1 1/2 cups powdered sugar
- 2 Tbsp butter, softened
- 2-3 Tbsp milk
- 1/2 tsp vanilla
### Instructions
1. Cream butter and powdered sugar together.
2. Add milk a tablespoon at a time until spreading consistency is reached.
3. Stir in vanilla. -

3. Sift all dry ingredients.
4. Add dry ingredients alternately with milk to the first mixture.
5. Bake at 375° for 30 minutes.

Indian Pearl Pudding
Indian Pearl Pudding March 27, 1966
Sprinkle 2 tablespoons of cornmeal in 1 pint of cold
milk. (scald and cook 10 minutes) Remove from
fire and add:
1 1/2 cups molasses 1/2 pkg. (whole) tapioca (which
3/4 c sugar has been soaked overnight)
1/4 teaspoon salt drain
1/4 c butter
add 4 beaten eggs 1 1/2 tsp. cinnamon
1 qt. plus 1c milk 1/2 tsp. ginger
1 tsp. nutmeg.
Pour in pan and bake for 1 hour in 300°
Then add 1 cup milk and cook for another
hour. after first hour and a half turn heat
down to 250°

# Indian Pearl Pudding

## Ingredients
- 2 Tbsp cornmeal
- 1 pint cold milk (for scalding)
- 1 1/2 cups molasses
- 3/4 cup sugar
- 1/4 tsp salt
- 4 beaten eggs
- 1 qt plus 1 cup milk
- 1/2 pkg whole tapioca (soaked overnight, drained)
- 1/4 cup butter
- 1 1/2 tsp cinnamon
- 1/2 tsp ginger
- 1 tsp nutmeg
- 1 cup milk (added during baking)
## Instructions
1. Sprinkle 2 Tbsp cornmeal into 1 pint of cold milk. Scald and cook 10 minutes.
2. Remove from heat and add: molasses, sugar, salt, drained tapioca, butter, cinnamon, ginger, and nutmeg.
3. Add 4 beaten eggs and 1 qt plus 1 cup milk. Mix to combine.
4. Pour into a baking pan and bake at 300° for 1 hour.
5. After the first hour, add 1 cup milk and continue baking for another hour.
6. After the first hour and a half of total baking time, turn heat down to 250°. -
Applesauce Bread Pudding
Applesauce Bread Pudding
5 cups of soft bread crumbs
3 cups of scalded milk
1 cup of applesauce
1 cup of sugar, 3 eggs
1/2 cup of Butter or Margarine
1 Teaspoon of cinnamon.
1/2 " " " nutmeg
1/2 " " " vanilla
Preheat oven to 325°F.
Soak bread crumbs in milk
Add remaining ingredients, mix
until well blended. Spoon the
applesauce mixture into greased
2 quart baking dish. Bake 1 1/2 hour
or until knife inserted 1 inch from
edge comes out clean. Serve hot or
cold. Put raisins if you like. Crushed
pine apple may be used in place
of applesauce

- 1 cup applesauce
- 1 cup sugar
- 3 eggs
- 1/2 cup butter or margarine
- 1 tsp cinnamon

- 1/2 tsp vanilla
## Instructions
1. Preheat oven to 325°F.
2. Soak bread crumbs in milk.
3. Add remaining ingredients and mix until well blended.
4. Spoon the applesauce mixture into a greased 2 quart baking dish.
5. Bake 1 1/2 hours or until a knife inserted 1 inch from the edge comes out clean.
6. Serve hot or cold. Raisins may be added if desired. Crushed pineapple may be used in place of applesauce. -

## Ingredients
- 2 level tsp baking soda
- 1/2 cup molasses
- 1/4 cup butter, melted
- 1/4 cup lard, melted (scant; or use margarine)
- 1 egg, beaten
- 1/2 cup sugar
- 2 Tbsp water
- 1 Tbsp vanilla
- 2 1/4 cups flour, sifted (more as needed)
- Cinnamon, to taste
- Ginger, to taste
- Sugar for sprinkling (optional)
## Instructions
1. Combine 2 level tsp baking soda into 1/2 cup molasses. Let sit for a few minutes.
2. Melt 1/4 cup butter and 1/4 cup lard together (scant; margarine may be used).
3. Beat 1 egg and add to the butter and lard mixture along with 1/2 cup sugar.
4. Mix all together with 2 Tbsp water and 1 Tbsp vanilla.
5. Sift in 2 1/4 cups flour along with cinnamon and ginger; mix to combine.
6. Roll out dough and cut into cookies, rolling fairly thick.
7. Sprinkle with sugar before baking if desired.
8. Bake at 360° for 10 to 12 minutes.
