Super Fudge

Dear Barbara: I am a procrastinator!
But here is the recipe you wanted.
1 cup honey, 1 cup peanut butter,
heated in pan. Stir in quickly:
• 1 cup carob powder (a chocolate
substitute), i cup sesame seeds,
1 cup sunflower seed, a half cup
of shredded coconut and a ½ cup of
chopped dates. Pat into a greased
square (8 x 8) or (9 x 9) pan and
refrigerate to harden. Cut into
squares and keep refrigerated, if
possible.
PREVENTION magazine calls it
'Super Fudge' -- Other dried fruit
such as apricots or pears could
be substituted for the dates.
Raisins, too, maybe?

# Super Fudge
*Recipe from the kitchen of Mary Jo — 1976*
## Ingredients
- 1 cup honey
- 1 cup peanut butter

## Instructions
1. Heat honey and peanut butter together in a pan.
2. Stir in quickly: carob powder, sesame seeds, sunflower seeds, shredded coconut, and chopped dates.
3. Pat into a greased 8x8 or 9x9 square pan.
4. Refrigerate to harden.
5. Cut into squares and keep refrigerated, if possible.

Dried Fruit Granola

DRIED FRUIT GRANOLA
1 (18oz) pkg old-fashioned oatmeal (6 cups)
2c. wheat germ
1/2c. salad oil
1c. dk. br.sugar, firmly packed
1c. dark raisins
1c. raw unsalted peanuts
1c. chopped pitted dates
1c. chopped pitted prunes
1c. chopped dried apples
1c. chopped dried apricots
1 (2 3/4oz) jar sesame seeds
In large mixing bowl mix oatmeal & wheat germ. Sprinkle
with oil. Add sugar, raisins & peanuts. Mix well. Add dates,
prunes, apples, apricots & sesame seeds. Mix well. Spread
mixture thinly on two jelly roll pans. Bake in preheated 350°
oven 30-35 min until lightly browned. Stir occasionally.
Cool completely. Store in airtight jars in cool dry place. Serve
1/2c. mix per person, topped with milk & honey. Makes 16 cups.

## Ingredients

- 1 c. dark raisins
- 1 c. raw unsalted peanuts
- 1 c. chopped pitted dates
- 1 c. chopped pitted prunes
- 1 c. chopped dried apples
- 1 c. chopped dried apricots
- 1 (2 3/4 oz) jar sesame seeds
## Instructions
1. In a large mixing bowl, mix oatmeal and wheat germ.
2. Sprinkle with oil. Add sugar, raisins, and peanuts. Mix well.
3. Add dates, prunes, apples, apricots, and sesame seeds. Mix well.
4. Spread mixture thinly on two jelly roll pans.
5. Bake in preheated 350° oven 30–35 minutes until lightly browned. Stir occasionally.
6. Cool completely.
7. Store in airtight jars in a cool, dry place.
8. Serve 1/2 c. mix per person, topped with milk and honey. -

# Alice's Salad
## Ingredients
### Salad
- 1 small cabbage, or 1/2 larger one
- 4 green onions, with part of green
### Dressing
- 2 Tbsp sugar
- 1 Tbsp salt
- 1/4 Tbsp pepper
- 1 tsp Accent
- 1/2 cup oil
- 3 Tbsp vinegar
- Seasoning packet from 1 pkg Top Ramen Noodles, chicken flavor
### Topping
- 1 pkg Top Ramen Noodles, uncooked (noodles only, reserved from above)
- 1/2 cup slivered almonds
- 2 Tbsp sesame seeds
## Instructions
### Salad
1. Slice cabbage and green onions fine.
2. Put in bowl and refrigerate until ready to serve.
### Dressing
1. Combine sugar, salt, pepper, Accent, oil, vinegar, and seasoning packet.
2. Mix well and refrigerate until ready to serve.
### Topping
1. Crush uncooked noodles in the package and reserve.
2. Combine crushed noodles, slivered almonds, and sesame seeds.
3. Toast at 350° for about 10 minutes.
### Assembly
1. Mix all components together, but not until ready to serve. -
Sesame Fried Chicken
SESAME FRIED CHICKEN
1 Lynden Fryer, Cut-Up ½ teaspoon monosodium
1 cup flour glutamate
1½ teaspoons salt ½ cup shortening or oil
½ teaspoon pepper ¼ cup sesame seeds
Combine flour and seasonings in paper bag. Dredge chicken
pieces in flour mixture. Brown in hot fat. Cover and cook
slowly for 20 minutes, turning once. Remove from skillet,
cool slightly, then roll each piece in sesame seeds. Return
to skillet and turn each piece until seeds are toasted.
4 to 6 servings.

# Sesame Fried Chicken

*Serves 4 to 6*
## Ingredients
- 1 Lynden Fryer, cut-up
- 1 cup flour
- 1 1/2 tsp salt
- 1/2 tsp pepper
- 1/2 tsp monosodium glutamate
- 1/2 cup shortening or oil
- 1/4 cup sesame seeds
## Instructions
1. Combine flour and seasonings in a paper bag.
2. Dredge chicken pieces in the flour mixture.
3. Brown in hot fat.
4. Cover and cook slowly for 20 minutes, turning once.
5. Remove from skillet and cool slightly.
6. Roll each piece in sesame seeds.
7. Return to skillet and turn each piece until seeds are toasted. -

1/2 c. warm water

Dissolve yeast in warm water + sugar.
Combine remaining ingredients, using

times. Let rise. Bake at 400° for about 30

## Ingredients
- 1/2 cup warm water
- 2 yeast cakes
- 2 cups hot water
- 3 Tbsp sugar
- 1 Tbsp salt
- 1/3 cup melted shortening or salad oil
- 6 cups flour
- Beaten egg whites or water (for brushing tops)
- Sesame seeds (for topping)
## Instructions
1. Dissolve yeast in warm water and sugar.
2. Combine remaining ingredients, using only 3 cups of the flour; beat well.
3. Add remaining flour to make a soft dough.
4. Let dough rest for 10 minutes, then punch down. Let rest and punch down for a total of 5 times.
5. Turn dough out onto a floured board; knead to coat dough.
6. Divide into 2 or 3 parts; roll each into a rectangle and roll up like a jelly roll.
7. Place on a greased cookie sheet.
8. Brush tops with beaten egg whites or water; sprinkle with sesame seeds; slash top diagonally 3 times.
9. Let rise.
10. Bake at 400°F for about 30 minutes, or until done. -

Wheat-Soy- Sesame Bread (3 loaves=16 slices=4 gr. protein
per slice.)
4 cups warm water 1½ cup sesame seeds
2 T. yeast 1 cup soy flour
½ cup oil ¼ cup soya grits
½ cup honey 2 cups high gluten flour
1 T. salt 6 cups whole wheat flour
Dissolve yeast in water, add oil, honey, salt, sesame
seeds, soy flour, grits, & gluten flour. Add 3 cups flour
and beat thouroughly. Add remaining flour +1 cup white flou
r if too sticky to knead. Turn out on floured board, knead
adding white flour if necessary. Rise till doubled (1½
hours). Punch down, knead again. Divide in 3 loaves, rise
in pan until nearly doubled. Bake at 350 for 30 minutes.

*Makes 3 loaves (16 slices each, 4 g protein per slice)*
## Ingredients
- 4 cups warm water
- 2 Tbsp yeast
- 1/2 cup oil
- 1/2 cup honey
- 1 Tbsp salt
- 1 1/2 cups sesame seeds
- 1 cup soy flour
- 1/4 cup soya grits
- 2 cups high gluten flour
- 6 cups whole wheat flour
- Up to 1 cup white flour (if needed for kneading)
## Instructions
1. Dissolve yeast in warm water.
2. Add oil, honey, salt, sesame seeds, soy flour, soya grits, and high gluten flour; stir to combine.
3. Add 3 cups of the whole wheat flour and beat thoroughly.
4. Add the remaining whole wheat flour, plus up to 1 cup white flour if the dough is too sticky to knead.
5. Turn dough out onto a floured board and knead, adding additional white flour as necessary.
6. Allow dough to rise until doubled, approximately 1 1/2 hours.
7. Punch down and knead again.
8. Divide into 3 loaves and place in pans. Allow to rise until nearly doubled.
9. Bake at 350°F for 30 minutes. -

SESAME HALIBUT STEAKS
2 halibut steaks, 1 to 1½ inches
thick
⅓ cup melted butter
Dash garlic salt
2 cups soft bread crumbs
1 teaspoon garlic salt
⅛ teaspoon seasoned pepper
2 tablespoons toasted sesame
seeds
Brush the halibut with some of the
melted butter and arrange in a shallow
baking dish. Sprinkle with garlic salt.
Combine the balance of melted butter
with bread crumbs, garlic salt, seasoned
pepper, and sesame seeds. Mound half of
mixture on each piece of halibut. Bake in
a 350 degrees uncovered, until fish flakes
easily with a fork, approximately 25 to 30
minutes. Yields 2 servings.

tablespoons)
2¼ cups soy sauce
Mix dry mustard, water, MSG, sesame
seeds and soy sauce. Serve as a dipping
sauce with chicken and steak.

- 1 Tbsp sugar
- 1/2 cup milk
- Sesame seeds or poppy seeds (for topping)
## Instructions
1. Mix ingredients in a bowl.
2. Knead on a board.
3. Roll out and cut into strips.
4. Roll each strip in butter.
5. Sprinkle sesame seeds or poppy seeds on top.
6. Bake 12 minutes at 400°F. -

1/2 cup sliced almonds 2 tsp. sugar

1 pkg. chicken-flavored ramen noodles 1 tsp. salt
Toast sesame seeds and almonds 5-10 minutes in 350 degree oven.
Break noodles into bite-size pieces and add to sesame seeds and almonds.
Combine cabbage and onions. Combine flavor packet from ramen noodles
with pepper, sugar, oil, vinegar and salt and mix well.
At serving time, add seeds, almonds and noodles to cabbage and
onions and mix well. For softer noodles in salad, combine all ingredients in
advance of serving time.
