# Pineapple Coffee Cake
## Ingredients
- 1 #2 can (20 oz) crushed pineapple, drained (reserve syrup)
- 2 cups biscuit mix
- 1 egg
- 1/4 cup sugar
- 1/4 cup brown sugar
- Nutmeg or cinnamon, to taste
## Instructions
1. Drain the crushed pineapple, reserving the syrup.
2. Mix the pineapple syrup with 2 cups biscuit mix, 1 egg, and 1/4 cup sugar.
3. Pour batter into a greased 8 or 9 inch pan.
4. Cover the top evenly with the crushed pineapple.
5. Sprinkle with 1/4 cup brown sugar and nutmeg or cinnamon.
6. Bake at 400°F for 25–30 minutes. -

Yellow Cake Mix—Yellow can crushed pineapple
Large Cool Whip
Drain Pineapple saving Juice. Use pineapple juice as
Part of liquid and complete with water for correct amount.
Stir half the pineapple in the cake batter. Bake as per box
Instructions.
350- 29 to 34 min.
When cake is cool fold remaining pineapple and spread on
Cake.

# Angel Cake
## Ingredients
- 1 box yellow cake mix
- 1 can (yellow/standard size 20 oz) crushed pineapple
- 1 large container Cool Whip
## Instructions
1. Drain pineapple, saving the juice.
2. Use the pineapple juice as part of the liquid called for in the cake mix, completing with water to reach the correct amount.
3. Stir half of the drained pineapple into the cake batter.
4. Bake as per box instructions at 350°F for 29 to 34 minutes.
5. When cake is cool, fold the remaining pineapple into the Cool Whip and spread over the cake. -
Granny Cake
GRANNY CAKE
2 EGGS
2 cups flour
1½ cups sugar
1 teaspoon salt
1 teaspoon soda
1----No.2 can of crushed pineapple and juice
Mix all together and pour into a 9 x 13 pan. On
top sprinkle ½ cup brown sugar and ½ cup chopped
nuts.
Bake 350 degrees......40 minutes.
While cake is baking...mix together 2/3 cup sugar,
1 small can milnot, 2/3 stick butter, 1 teasp. vanilla. Boil
il 2 to 3 min., let stand, pour over cake while hot from oven.

# Granny Cake
## Ingredients
- 2 eggs
- 2 cups flour
- 1 1/2 cups sugar
- 1 tsp salt
- 1 tsp baking soda
- 1 No. 2 can crushed pineapple and juice (~2 cups)
## Topping
- 1/2 cup brown sugar
- 1/2 cup chopped nuts
## Glaze
- 2/3 cup sugar
- 1 small can milnot (evaporated milk)
- 2/3 stick butter
- 1 tsp vanilla
## Instructions
1. Mix eggs, flour, sugar, salt, baking soda, and crushed pineapple with juice all together.
2. Pour into a 9 x 13 pan.
3. Sprinkle top with brown sugar and chopped nuts.
4. Bake at 350 degrees for 40 minutes.
5. While cake is baking, mix together sugar, milnot, butter, and vanilla for the glaze.
6. Boil glaze 2 to 3 minutes, then let stand.
7. Pour glaze over cake while hot from oven.
