# Rocks — Frances's Recipe
*Recipe from the kitchen of Frances*
## Ingredients
- 2 cups brown sugar, sifted
- 1 cup shortening
- 2 eggs
- 1 cup cold coffee
- 1 tsp baking soda, level
- 4 cups flour
- 1 heaping tsp baking powder
- 1 tsp cinnamon
- 1 tsp nutmeg
- 2 cups raisins
- 1/2 cup walnuts
- 1/4 tsp salt
## Instructions
1. Cream shortening and sifted brown sugar together until smooth.
2. Beat in eggs one at a time.
3. Stir in cold coffee.
4. Sift together flour, baking soda, baking powder, cinnamon, and nutmeg.
5. Add dry ingredients to creamed mixture and mix until combined.
6. Fold in raisins and walnuts.
7. Drop by spoonfuls onto greased baking sheets.
8. Bake until set and lightly browned. -

Rhubarb Cake
Put following ingredients together
in mixing bowl:
2 c. sugar 1/2 tsp. salt
2/3 c. shortening 2 tsp. soda
2 tsp. cinnamon 2 eggs
1 tsp. cloves 3 c. flour
1/2 tsp. nutmeg 1 c. cold coffee
Mix all this together - Then add:
1c. raisins, 2c. raw rhubarb & 1c. nuts.
Back:
Bake 1 hr. 350° in 9x13 greased &
floured pan.

# Rhubarb Cake
## Ingredients
- 2 cups sugar
- 2/3 cup shortening
- 2 tsp cinnamon
- 1 tsp cloves
- 1/2 tsp nutmeg
- 1/2 tsp salt
- 2 tsp baking soda
- 2 eggs
- 3 cups flour
- 1 cup cold coffee
- 1 cup raisins
- 2 cups raw rhubarb
- 1 cup nuts
## Instructions
1. Put all ingredients (sugar, shortening, cinnamon, cloves, nutmeg, salt, soda, eggs, flour, and cold coffee) together in mixing bowl and mix together.
2. Then add raisins, raw rhubarb, and nuts.
3. Bake 1 hour at 350° in a greased and floured 9x13 pan. -

blend & cool
2c flour add in 1/3s beating well
1 1/2 tsp baking soda 2 eggs well beaten
1/2 tsp salt beat in Choc mix add
combine & beat drying in 1/3s do not overbeat
1 1/2 cups sugar 350 - 35 min
1c thick sour cream square cake 350
2 1/2 tsp. vanilla 40 to 45

# Sour Cream Chocolate Cake
## Ingredients
- 3 squares (3 oz) chocolate
- 1/2 cup double strength coffee beverage
- 2 cups flour
- 1 1/2 tsp baking soda
- 1/2 tsp salt
- 1 1/2 cups sugar
- 1 cup thick sour cream
- 2 1/2 tsp vanilla
- 2 eggs, well beaten
## Instructions
1. Combine chocolate and 1/2 cup double strength coffee beverage; blend and cool.
2. Combine flour, baking soda, and salt; set aside.
3. Beat together sugar, sour cream, and vanilla.
4. Add dry ingredients in thirds, beating well after each addition.
5. Add 2 well-beaten eggs; beat in chocolate mixture.
6. Add remaining dry ingredients in thirds; do not overbeat.
7. Bake at 350°F for 35 minutes (or 40 to 45 minutes for a square cake). -

Mix altogether in bowl at one time-
2 Cups Sugar ½ tsp salt
⅔ cup shortening 2 tsp. soda
2 tsp. cinnamon 2 eggs
1 tsp. cloves 3 cups flour
½ tsp. nutmeg 1 cup cold coffee
Mix well, then add 1 cup raisins, 2 cup raw
rhubarb & 1 cup chopped nuts.
Bake 1 hour 350 in 9x13 greased & floured

Indian Chocolate Cake 1973
Cream together 1/2 c. butter or oleo
1 c. sugar
1/2 tsp cream of tartar
Add one lg. egg - beat well.
Sift together 1 1/2 c. flour
2 heaping tsp cocoa
1 tsp soda.
Add to mixture alternating with
one c. cold coffee (or Instant)
Beat well and bake 350° until
done.
Frosting - 3 tbsp. oleo.
3 " milk or cream
3/4 c. white sugar
Boil 30 seconds.
Add 1/4 c. chocolate chips.
Beat and spread on cake
for larger cake, double recipe

# Indian Chocolate Cake
## Ingredients
- 1/2 c. butter or oleo
- 1 c. sugar
- 1/2 tsp cream of tartar
- 1 large egg
- 1 1/2 c. flour
- 2 heaping tsp cocoa
- 1 tsp baking soda
- 1 c. cold coffee (or instant)
## Instructions
1. Cream together butter or oleo, sugar, and cream of tartar.
2. Add one large egg and beat well.
3. Sift together flour, cocoa, and baking soda.
4. Add dry ingredients to creamed mixture alternating with the cold coffee.
5. Beat well and bake at 350° until done.
## Frosting
- 3 Tbsp oleo
- 3 Tbsp milk or cream
- 3/4 c. white sugar
- 1/4 c. chocolate chips
## Frosting Instructions
1. Combine oleo, milk or cream, and white sugar.
2. Boil 30 seconds.
3. Add chocolate chips.
4. Beat and spread on cake.
5. For a larger cake, double the recipe.
