Coffee Cake
AND HERE IS THE RECIPE:
2 cups flour.
3 teaspoons baking powder.
1 tablespoon sugar.
½ teaspoon salt.
4 tablespoons shortening.
1 egg.
⅔ cups water.
4 apples.
½ cup sugar.
2 teaspoons cinnamon.
Sift flour, baking powder, salt and the
first measurement of sugar mentioned, add
shortening and mix with fork. Beat egg
and add water. Add the water and egg
to dry ingredients.
Place the dough ½ inch thick in greased
tin. Cut apples and press them close to-
gether into dough. Dot with butter and
add sugar and cinnamon on top. Bake ½
hour in oven at 350 degrees. Serve with
cream.

## Ingredients

## Instructions

2. Add shortening and mix with a fork.

1½ C brown sugar
1 lb whole candied cherries
2 eggs
1 c whole filberts
½ c flour
1 c pecans
1 tsp Cinnamon
1 c walnuts

1 c ~~big~~ brazil nuts
1 tsp vanilla cut in half
1 C flour
1 lb dates

Cream together butter & brown use
all eggs & mix
stir in ½ c. flour, cinn, soda, vanilla
Dredge fruit & nuts with one cup flour
mix together the creamed mix & fruit & nuts
place spoonfuls on greased cookie sheet
allow for spreading of the dough
Bake 375 for 12-15 min.

- 4 slices (1 c) finely cut pineapple
- 1 lb whole candied cherries
- 1 c whole filberts
- 1 c pecans
- 1 c walnuts
- 1 c brazil nuts, cut in half
- 1 lb dates
## Instructions
1. Cream together butter and brown sugar.
2. Add all eggs and mix.
3. Stir in 1/2 c flour, cinnamon, soda, and vanilla.
4. Dredge fruit and nuts with one cup flour.
5. Mix together the creamed mixture and fruit and nuts.
6. Place spoonfuls on greased cookie sheet; allow for spreading of the dough.
7. Bake at 375°F for 12–15 minutes. -

## Ingredients
- 1 cup butter
- 1 cup sugar
- 1 cup brown sugar
- 3 eggs
- 3 1/2 cups flour, sifted
- 1 tsp baking soda
- 2 tsp cinnamon
- 1/2 tsp salt
- 1/4 lb almonds, chopped
## Instructions
1. Cream butter, sugar, and brown sugar together.
2. Add 3 eggs and beat thoroughly.
3. Sift flour and measure out 3 1/2 cups. Add baking soda, cinnamon, and salt to the flour.
4. Add flour mixture to the first mixture and blend thoroughly, kneading with hands if necessary.
5. Roll dough into rolls and place in the ice cabinet (refrigerator).
6. Cut into thin slices and bake in an oven hot enough to cook without melting the dough. -

# Almond Ice Box Cookies
## Ingredients
- 1/2 cup butter
- 3/4 cup granulated sugar
- 1/4 cup brown sugar
- 1 1/2 cups flour
- 1/2 tsp baking soda
- 3/4 tsp cinnamon
- 1 egg, well beaten
- 1/3 cup sliced blanched almonds
## Instructions
1. Combine all ingredients and shape dough into rolls.
2. Wrap rolls in wax paper and chill overnight in the refrigerator.
3. Cut into thin slices.

## Ingredients
- 2 cups brown sugar, sifted
- 1 cup shortening
- 2 eggs
- 1 cup cold coffee
- 1 tsp baking soda, level
- 4 cups flour
- 1 heaping tsp baking powder
- 1 tsp cinnamon
- 1 tsp nutmeg
- 2 cups raisins
- 1/2 cup walnuts
- 1/4 tsp salt
## Instructions
1. Cream shortening and sifted brown sugar together until smooth.
2. Beat in eggs one at a time.
3. Stir in cold coffee.
4. Sift together flour, baking soda, baking powder, cinnamon, and nutmeg.
5. Add dry ingredients to creamed mixture and mix until combined.
6. Fold in raisins and walnuts.
7. Drop by spoonfuls onto greased baking sheets.
8. Bake until set and lightly browned. -

2 1/2 c regular all purpose flour unsifted
1/2 c coaoa
2 1/2 tsps baking powder
1 1/2 tsps soda
1 tsp each salt and cinnamon
3/4 c soft butter or margarine
2 c sugar
3 eggs
2 tsps each vanilla and grated orange peel
2 c coarsely shredded zucchini
1/2 c milk
1 c chopped pecans or walnuts

Combine the flour, cocoa, baking powder, soda

## Ingredients
### Cake
- 2 1/2 cups regular all-purpose flour, unsifted
- 1/2 cup cocoa
- 2 1/2 tsp baking powder
- 1 1/2 tsp baking soda
- 1 tsp salt
- 1 tsp cinnamon
- 3/4 cup soft butter or margarine
- 2 cups sugar
- 3 eggs
- 2 tsp vanilla
- 2 tsp grated orange peel
- 2 cups coarsely shredded zucchini
- 1/2 cup milk
- 1 cup chopped pecans or walnuts
### Glaze
- 2 cups powdered sugar
- 3 Tbsp milk
- 1 tsp vanilla
## Instructions
### Cake
1. Combine the flour, cocoa, baking powder, baking soda, salt, and cinnamon; set aside.
2. With a rotary beater, beat together the butter and sugar until smoothly blended.
3. Add the eggs one at a time, beating well after each addition.
4. With a spoon, stir in the vanilla, orange peel, and zucchini.
5. Alternately stir the dry ingredients and milk into the zucchini mixture, adding the nuts with the last addition.
6. Pour batter into a greased and floured 10-inch tube pan or bundt pan.
7. Bake at 350°F for 1 hour, or until a wooden pick inserted in the center comes out clean.
8. Cool in pan 15 minutes, then turn out on a wire rack to cool thoroughly.
### Glaze
1. Mix together 2 cups powdered sugar, 3 Tbsp milk, and 1 tsp vanilla; beat until smooth.
### Assembly
1. Drizzle glaze over cooled cake.
2. Cut in thin slices to serve. -

2 c. chopped onions 1 tbsp cinnamon
3 " green peppers 1 " ginger
3 c. sugar 1 " nutmeg
1/2 c. salt 1 tsp or a little
1 1/2 qts vinegar less of cayenne
pepper.

## Ingredients
- 1 peck ripe tomatoes
- 2 cups chopped onions
- 3 cups green peppers
- 3 cups sugar
- 1/2 cup salt
- 1 1/2 qts vinegar
- 1 Tbsp cinnamon
- 1 Tbsp ginger
- 1 Tbsp nutmeg
- 1 tsp cayenne pepper (or a little less)
## Instructions
1. Combine all ingredients.
2. Cook and process as desired for chili sauce. -

Saccharin Pickles
Wash cucumbers and dry
thoroly. 2 qts of vinegar 1/4 c
salt, 1½ tsp ground cinnamon
½ tsp ground cloves, ½ tsp allspice
3 tbsp dry ground mustard, 2 tsp
powdered alum. 1tsp saccharin
½ c. of prepared horse radish
mix ingredients thoroly and

## Ingredients
- Cucumbers, washed and dried thoroughly
- 2 qts vinegar
- 1/4 c salt
- 1 1/2 tsp ground cinnamon
- 1/2 tsp ground cloves
- 1/2 tsp allspice
- 3 Tbsp dry ground mustard
- 2 tsp powdered alum
- 1 tsp saccharin
- 1/2 c prepared horseradish
## Instructions
1. Wash cucumbers and dry thoroughly.
2. Mix all remaining ingredients thoroughly.
3. Pour brine mixture over cucumbers packed in jars. -
Apple Walnut Squares
APPLE WALNUT SQUARES
3 cups flour
2 teaspoons baking powder
1 teaspoon salt
1½ cups brown sugar, lumps
broken
1 teaspoon cinnamon
½ teaspoon allspice
2 sticks butter, cut into
pieces
3 eggs
½ cup apple cider or juice
1 cup chopped walnuts
½ cup raisins
3 cups apples, peeled, cored
and coarsely chopped
In large bowl, sift together
flour, baking powder and salt. Mix
in brown sugar, cinnamon and alls-
pice. With pastry blender or two
knives, cut butter into mixture until
it is as fine as oatmeal.
In another small bowl, lightly
beat eggs and add cider. Stir into
batter until well combined. Fold in
walnuts, raisins and apples. The
batter will be very heavy.
Butter a 9-by-12-inch baking
pan and spoon batter in, smoothing
out surface. Bake in preheated 325-
degree F. oven for 1 hour or until
golden brown and done. Cool and
cut into squares to serve.

## Ingredients
- 12 large ripe tomatoes
- 2 large onions, chopped and mixed
- 4 medium-sized green peppers
- 2 Tbsp salt
- 1 Tbsp ground cinnamon
- 1 Tbsp sugar
- 3 cups vinegar
## Instructions
1. Chop tomatoes, onions, and green peppers and combine.
2. Add salt, ground cinnamon, sugar, and vinegar.
3. Boil for 1 1/2 hours, stirring frequently. -
15 Minute Cuke Pickles
15 min Cuke pickles
4 qt cukes sliced or chunked 1 tsp Black pepper
3 c. water 1 tsp ground cloves
5 c Cider Vinegar 1 tsp cinnamon
5 c sugar 3 tsp salt
Use select fresh cukes, wash, soak in cold
water short time. Mix vinegar, sugar, water
salt & spice. Put on stove & let stand bail
Drain cukes. Add vinegar mixture & allow
to bail again. Bail 5 min then put in jars
& seal while hot.

# 15 Minute Cuke Pickles
## Ingredients
- 4 qt cucumbers, sliced or chunked
- 3 c water
- 5 c cider vinegar
- 5 c sugar
- 1 tsp black pepper
- 1 tsp ground cloves
- 1 tsp cinnamon
- 3 tsp salt
## Instructions
1. Select fresh cucumbers, wash, and soak in cold water a short time.
2. Mix vinegar, sugar, water, salt, and spices together.
3. Put on stove and let come to a boil.
4. Drain cucumbers.
5. Add vinegar mixture to cucumbers and allow to boil again.
6. Boil 5 minutes, then put in jars and seal while hot. -
Turmeric Pickles
Here's what's cookin' Tumeric Serves
Recipe from the kitchen of
Peel & slice one dozen Cucumbers &
3 onions. Sprinkle with salt & let
stand over nite. Drain thoroughly in
morning. 1 pt. Vinegar, 1 C of sugar,
2 tsp of mustard see, 2 tsp celery
seed. 1 tsp of tumeric powder.
1 stick of cinnnamon bark. Put all together
including sliced cucumbers & onions
& bail 20 min.

## Ingredients
- 12 cucumbers, peeled and sliced
- 3 onions, sliced
- Salt (for overnight soak)
- 1 pt. vinegar
- 1 cup sugar
- 2 tsp mustard seed
- 2 tsp celery seed
- 1 tsp turmeric powder
- 1 stick cinnamon bark
## Instructions
1. Peel and slice one dozen cucumbers and 3 onions.
2. Sprinkle with salt and let stand overnight.
3. Drain thoroughly in the morning.
4. Combine vinegar, sugar, mustard seed, celery seed, turmeric powder, and cinnamon bark in a pot.
5. Add the drained sliced cucumbers and onions.
6. Bring all together and boil for 20 minutes.
