Calico Bean Soup
"Calico Bean Soup"
Wash beans thoroughly. Place in large kettle & cover
with water. Add 2 T. salt. Soak overnight. In the
morning drain off water, add 2 quarts fresh water & ham
or ham hocks. Slowly simmer 2 - 3 hours.
ADD: 1 large chopped onion
1 C. sliced celery or carrots (if desired)
1 large can tomatoes, cut up
1 green pepper (if desired)
1 t. chili powder (if desired)
1 bay leaf
1 clove garlic minced
salt & pepper
Simmer another 30 minutes. Serves 6 to 8

## Ingredients
- Calico beans (mixed dried beans, 1-2 lbs), washed thoroughly
- 2 Tbsp salt (for soaking)
- 2 quarts fresh water
- Ham or ham hocks
- 1 large onion, chopped
- 1 cup sliced celery or carrots (if desired)
- 1 large can tomatoes, cut up
- 1 green pepper (if desired)
- 1 tsp chili powder (if desired)
- 1 bay leaf
- 1 clove garlic, minced
- Salt and pepper
## Instructions
1. Wash beans thoroughly. Place in a large kettle and cover with water. Add 2 Tbsp salt. Soak overnight.
2. In the morning, drain off the soaking water. Add 2 quarts fresh water and ham or ham hocks.
3. Slowly simmer for 2–3 hours.
4. Add the chopped onion, sliced celery or carrots (if desired), canned tomatoes (cut up), green pepper (if desired), chili powder (if desired), bay leaf, minced garlic, and salt and pepper.
5. Simmer another 30 minutes. Serves 6 to 8.

Pineapple Dillies / Pineapple-Lemon Peas / Pineapple-Chili Green Beans
PINEAPPLE DILLIES
1 pound carrots 2 tablespoons butter or margarine
1/2 cup water 3/4 cup pineapple chunks
1/2 teaspoon salt 1/4 teaspoon dried dill
3 green onions Salt and pepper
Cut carrots into 3-inch strips; put in 10-inch skillet with water and
salt; cover tightly and simmer until tender-crisp, 5 to 10 minutes.
Cut onions into thin diagonal slices. Push carrots to one side of
skillet. Add butter to liquid in pan (about a tablespoon will be left).
Turn up heat. When bubbly add drained pineapple chunks, onion
and dill. Heat and stir a minute or two. Combine with carrots.
Season with additional salt and pepper, if desired. 4 servings.

- 3 green onions
- 2 Tbsp butter or margarine
- 3/4 cup pineapple chunks, drained

1 medium white onion, chopped
1 ripe tomato
1 clove garlic, minced
1 (8-ounce) can green chili salsa (sauce)
1 (8-ounce) can green chili peppers, seeded, diced
1 teaspoon dried leaf oregano
1 teaspoon Tabasco pepper sauce (yes, one
teaspoon)
1 tablespoon hot chili powder (if varying
strengths of chili powder aren't available, use 2
tablespoons of most common chili powder to
substitute for this and the next two ingredients)
1 tablespoon medium strength chili powder
1 heaping tablespoon mild chili powder
½ to 1 teaspoon salt
In separate skillets, cook pork and beef 10 minutes.
Add ½ teaspoon cumin to each skillet. In a 6-quart
saucepot, combine celery, onion, tomato, garlic, chili
salsa, chili peppers, oregano and Tabasco sauce. Combine
chili powders in a small bowl; add a small amount of
water to form a paste; add to saucepot, mix well. Cook,
covered, 20 minutes, stirring occasionally. Drain juice
from meat, reserving ¼ cup; add meat and
reserved meat juice to chili mixture. Cook, stirring fre-
quently, 1 to 1½ hours, or until meat is tender. Before
serving, add salt to taste. Yields 4 to 6 servings.

## Ingredients
- 1 medium white onion, chopped
- 1 ripe tomato
- 1 clove garlic, minced
- 1 (8-oz) can green chili salsa (sauce)
- 1 (8-oz) can green chili peppers, seeded, diced
- 1 tsp dried leaf oregano
- 1 tsp Tabasco pepper sauce
- 1 Tbsp hot chili powder*
- 1 Tbsp medium strength chili powder*
- 1 heaping Tbsp mild chili powder*
- 1/2 to 1 tsp salt
- 1/2 tsp cumin (for pork skillet)
- 1/2 tsp cumin (for beef skillet)
*If varying strengths of chili powder are not available, substitute 2 Tbsp of standard chili powder for all three chili powder ingredients.
## Instructions
1. In separate skillets, cook pork and beef for 10 minutes. Add 1/2 tsp cumin to each skillet.

BAKED CORN, MEXICAN STYLE
3 tablespoons butter or margarine,
divided
1/2 cup soft bread crumbs

2 dashes hot-pepper sauce
2 eggs, separated
In small skillet melt butter. Add 2 ta-
blespoons to crumbs and toss with 1/4
cup cheese; set aside. Sauté onion and
pepper in remaining butter until onion
is tender. Mix well with remaining
cheese, rice, tomatoes, corn, salt, chili
powder, sugar and hot-pepper sauce.
Beat egg whites until stiff, then beat
yolks until slightly thickened. Stir yolks
into corn mixture, then fold in beaten
whites. Turn into shallow 1-1/2-quart
baking dish and sprinkle with reserved
crumbs. Bake in preheated 350° oven
30 minutes or until firm and browned.
Makes 4 servings. Per serving: 370 cal,
16 g pro, 25 g car, 24 g fat, 189 mg
chol with butter, 162 mg chol with
margarine.

# Baked Corn, Mexican Style
*From Woman's Day, June 16, 1981*
## Ingredients
- 3 Tbsp butter or margarine, divided
- 1/2 cup soft bread crumbs
- 1-1/4 cups shredded sharp Cheddar cheese (5 ounces), divided
- 1 small onion, minced
- 1/4 cup chopped green pepper
- 1 cup cooked rice
- 1 can (8 ounces) tomatoes
- 1 cup cooked whole-kernel corn cut from cob (2 large ears)
- 1/2 tsp seasoned salt
- 1/2 tsp chili powder
- 1 tsp brown sugar
- 2 dashes hot-pepper sauce
- 2 eggs, separated
## Instructions
1. In a small skillet, melt butter. Add 2 Tbsp melted butter to bread crumbs and toss with 1/4 cup cheese; set aside.
2. Sauté onion and green pepper in remaining butter until onion is tender.
3. Mix well with remaining cheese, rice, tomatoes, corn, seasoned salt, chili powder, brown sugar, and hot-pepper sauce.
4. Beat egg whites until stiff, then beat yolks until slightly thickened.
5. Stir yolks into corn mixture, then fold in beaten egg whites.
6. Turn into a shallow 1-1/2-quart baking dish and sprinkle with reserved crumb mixture.
7. Bake in a preheated 350° oven for 30 minutes or until firm and browned.
8. Makes 4 servings. -
Stuffed Tomatoes / Orange Beet Conserve
Prepare tomatoes for stuffing by cut-
ting off tops and scooping out seeds and
pulp. You may wish to scallop edges for
decoration.
Brown sausage, peppers and onion in oil
over medium heat. Add chili powder, rice
and bread crumbs. Mix and simmer for 2
minutes. Fill tomato shells, place in
greased baking dish and top with grated
cheese. Bake at 375 degrees for 30 min-
utes. Serves 6.
ORANGE BEET CONSERVE
8 medium beets
1 large orange, cut in eighths and
seeded
1 medium lemon, cut in eighths
and seeded
2 cups light corn syrup
2 cups sugar
1 cup slivered blanched almonds
1 tablespoon ground ginger
Cook beets in skins in boiling water to
cover until tender, about 25 minutes.
Drain and peel; cool and grate coarsely.
(Yields about 4 cups grated beets.)
Slice orange and lemon very thin. Mix
together in a large kettle the beets,
orange, lemon, corn syrup and sugar.
Bring to a boil over medium heat, stirring
constantly. Reduce heat and simmer 40
minutes, stirring occasionally. Add al-
monds and ginger; stir to mix and simmer
5 minutes longer or until thickened. Pour
into clean, hot jars leaving 1/4-inch heads-
pace.
Seal according to jar manufacturer's
directions. Process in boiling water bath
10 minutes for pint jars or 5 minutes for
1/2-pint jars. (If desired, ladle into sterili-
zed jelly glasses and seal with paraffin.)
Yields about six 1/2-pint jars.

- 1 large orange, cut in eighths and seeded
- 1 medium lemon, cut in eighths and seeded
- 2 cups light corn syrup
- 2 cups sugar
- 1 cup slivered blanched almonds
- 1 Tbsp ground ginger
## Instructions
1. Cook beets in skins in boiling water to cover until tender, about 25 minutes. Drain and peel; cool and grate coarsely. (Yields about 4 cups grated beets.)

12 oz. Jimmy Dean
Special Recipe Sausage
1 lb. ground beef
2 tsp. chili powder
½ tsp. garlic powder
1 tsp. salt
1 cup shredded lettuce
½ cup chopped green pepper
½ cup chopped onions
¼ tsp. oregano
1 large can
stewed tomatoes
1 cup grated cheese
2 pkg. taco shells
In a large skillet, over medium heat, cook crumbled sausage
until lightly browned. Add peppers and onions and saute
in sausage drippings. Drain. Add ground beef and cook
until lightly browned. Stir in oregano and chili powder.
Reduce heat and simmer 8 to 10 minutes. While above
mixture is simmering, combine the stewed tomatoes,
garlic powder, salt and pepper and bring to a boil. Cook
uncovered for about 5 minutes, to reduce liquid content.
To assemble tacos: With a slotted spoon, place about ¼
cup meat mixture in each taco shell. Top with 2 or 3 table-
spoons of tomato mixture, and add cheese and lettuce.
Serve immediately.

## Ingredients
- 12 oz. Jimmy Dean Special Recipe Sausage
- 1 lb. ground beef
- 2 tsp. chili powder
- 1/2 tsp. garlic powder
- 1 tsp. salt
- 1/2 cup chopped green pepper
- 1/2 cup chopped onions
- 1/4 tsp. oregano
- 1 large can stewed tomatoes
- 1 cup shredded lettuce
- 1 cup grated cheese
- 2 pkg. taco shells
## Instructions
1. In a large skillet, over medium heat, cook crumbled sausage until lightly browned.
2. Add peppers and onions and saute in sausage drippings. Drain.
3. Add ground beef and cook until lightly browned.
4. Stir in oregano and chili powder. Reduce heat and simmer 8 to 10 minutes.
5. While the meat mixture is simmering, combine the stewed tomatoes, garlic powder, salt and pepper and bring to a boil.
6. Cook uncovered for about 5 minutes to reduce liquid content.

4. Sauté onions and add to mixture.
5. Add soups and seasonings.
6. Mix well.
7. Pour into a 9x13 pan and bake at 350° for 35–40 minutes.
