Old Fashioned Apple Crescent
Here's what's cookin' Old Fashioned Apple Crescent Serves
Recipe from the kitchen of Mary Quantrell
3/4 C. sugar 6 apples (pared
1 T bsp. cornstarch cored & sliced)
1 tsp cinnamon 2 recipes double
crust pastry
Mix together first 3 ingredients.
Toss with apples & lemon juice. Roll dough
1/8" thick & cut into 12 - 7" circles. Place 1/2
cup filling on half of each circle. Fold
dough over filling to form crescent, seal
edges with fork. Cut slits in top.
Back:
Bake on cookie sheet at 425°F. for 20
min.
When cool, wrap crescents individually
and freeze. Makes 12.
For 1 - 9" pie: Use only 1 recipe double
crust pastry; dot filling with 1 Tbsp.

## Ingredients
- 3/4 cup sugar
- 1 Tbsp cornstarch
- 1 tsp cinnamon
- 6 apples, pared, cored & sliced

## Instructions
1. Mix together the first 3 ingredients (sugar, cornstarch, cinnamon).

3. Roll dough 1/8" thick and cut into 12 circles, each 7" in diameter.
4. Place 1/2 cup filling on half of each circle.
5. Fold dough over filling to form a crescent shape.
6. Seal edges with a fork.
7. Cut slits in top.
8. Bake on a cookie sheet at 425°F for 20 minutes.
9. When cool, wrap crescents individually and freeze.
### Alternate Method: 1 — 9" Pie
1. Use only 1 recipe double crust pastry.
2. Dot filling with 1 Tbsp margarine.
3. Bake 50 minutes at 425°F. -

Set the oven at 350°. Butter
a 1½ quart baking dish
Put in the baking dish:
3 cups tart apples, peeled & sliced.
Sprinkle with
½ c molasses or brown sugar
¼ teaspoon nutmeg
¼ t cinnamon
¼ t salt
Bake until the apples are soft.
Back:
Meanwhile prepare
Cottage Pudding batter
Spread it over the apples. Continue
baking until the top is brown & crusty
(about 25 min.)
Serve from the dish or turn out with
the apples on top.
Serve with Hard Sauce or
whipping cream.

# Apple Pan Dowdy
## Ingredients
- 3 cups tart apples, peeled and sliced
- 1/2 cup molasses or brown sugar
- 1/4 tsp nutmeg
- 1/4 tsp cinnamon
- 1/4 tsp salt
- Cottage Pudding batter (prepared separately)
## Instructions
1. Set the oven to 350°F. Butter a 1 1/2 quart baking dish.
2. Put the peeled and sliced apples into the baking dish.
3. Sprinkle over the apples: the molasses or brown sugar, nutmeg, cinnamon, and salt.
4. Bake until the apples are soft.
5. Meanwhile, prepare a Cottage Pudding batter.
6. Spread the Cottage Pudding batter over the softened apples.
7. Continue baking until the top is brown and crusty (about 25 minutes).
8. Serve from the dish, or turn out with the apples on top.
9. Serve with Hard Sauce or whipping cream.

Apple Torte
What's Cooking
Break up a meeting with this apple torte
Ladies getting together at your house to
plan the year's agenda? Serve this crusty
apple torte—it's not too sweet for a morn-
ing or afternoon meeting, but becomes a
lavish dessert with the addition of vanilla
ice cream.
Ingredients: 4 Tbs. soft butter, 1 cup
sugar, 1 egg, 1 cup flour, 1 t. cinnamon,
½ t. baking powder, ¼ t. soda, ⅛ t. salt.
3 peeled, cored apples cut in lengthwise
slices ⅛″ thick. Cream together butter and
sugar. Add egg and beat until light and
fluffy. Sift together flour, cinnamon, baking
powder, soda and salt, and beat in thor-
oughly. Stir apples into batter, which will
be thick and hard to stir. Turn into but-
tered 9″ pan and spread smooth. Bake at
350° 1 hour. Cool and cut into wedges.
Serve warm. Six servings.

# Apple Torte
*Northwest Woman — "What's Cooking" column by Jane Adams*
*Serves 6*
## Ingredients
- 4 Tbsp soft butter
- 1 cup sugar
- 1 egg
- 1 cup flour
- 1 tsp cinnamon
- 1/2 tsp baking powder
- 1/4 tsp baking soda
- 1/8 tsp salt
- 3 apples, peeled, cored, and cut lengthwise into 1/8-inch thick slices
## Instructions
1. Cream together butter and sugar.
2. Add egg and beat until light and fluffy.
3. Sift together flour, cinnamon, baking powder, baking soda, and salt; beat into the creamed mixture thoroughly.
4. Stir apples into the batter — it will be thick and hard to stir.
5. Turn batter into a buttered 9-inch pan and spread smooth.
6. Bake at 350°F for 1 hour.
7. Cool and cut into wedges. Serve warm. -
Government Sauce
GOVERNMENT SAUCE
3 quarts ripe tomatoes, peeled and chopped
2 quarts apples, peeled, cored and chopped
5 medium onions, chopped
2 cups vinegar
1¾ cups sugar
1½ teaspoons paprika
1 teaspoon dry mustard
1 teaspoon cinnamon
½ teaspoon cloves
2 teaspoons salt
Combine prepared vegetables and apples with other
ingredients. Cook until mixture is thickened, stirring
occasionally, usually about 30 minutes. Pour into hot,
sterilized jars and seal. If you prefer to insure the seal by
processing, process for 10 minutes in boiling water bath.
Yields 7 to 8 pints.

## Ingredients
- 3 quarts ripe tomatoes, peeled and chopped
- 2 quarts apples, peeled, cored and chopped
- 5 medium onions, chopped
- 2 cups vinegar
- 1 3/4 cups sugar
- 1 1/2 tsp paprika
- 1 tsp dry mustard

- 1/2 tsp cloves
- 2 tsp salt

1 egg.
⅔ cups water.
4 apples.
½ cup sugar.
2 teaspoons cinnamon.
Sift flour, baking powder, salt and the

shortening and mix with fork. Beat egg
and add water. Add the water and egg
to dry ingredients.
Place the dough ½ inch thick in greased
tin. Cut apples and press them close to-

## Ingredients
- 2 cups flour
- 3 tsp baking powder
- 1 Tbsp sugar
- 1/2 tsp salt
- 4 Tbsp shortening
- 1 egg
- 2/3 cup water
- 4 apples
- 1/2 cup sugar
- 2 tsp cinnamon
## Instructions
1. Sift flour, baking powder, salt, and the first measurement of sugar together.
2. Add shortening and mix with a fork.
3. Beat egg and add water. Add the water and egg mixture to the dry ingredients.
4. Place the dough 1/2 inch thick in a greased tin.
5. Cut apples and press them close together into the dough.
6. Dot with butter and add the 1/2 cup sugar and cinnamon on top.
7. Bake 1/2 hour (30 minutes) at 350°F.
8. Serve with cream. -
Bridget's Mulligatawny
BRIDGET'S MULLIGATAWNY
1 Tbs butter
1 Rasher bacon chopped (optional)
1 Onion - sliced
3 level tsp curry powder
1/2 " " turmeric
2 Granny Smith apples
2 Carrots, peeled & chopped
6 dried apricots, chopped
1 large ripe tomato, skinned + chopped
2 litres (8 cups) good chicken stock (or
bullion cubes w/ water)
Squeeze of lemon juice
Back:
Melt butter in large saucepan, add bacon
Saute onion untill soft and glossy.
Add curry + turmeric — saute one minute
Add rest of ingredients — simmer for
about 3/4 hour. Run through processor
Reheat and add lemon juice and taste
for salt.
Serve with whipped cream and a
lemon slice + parsley
Traditional garnish is boiled rice.

## Ingredients
- 1 Tbsp butter
- 1 rasher bacon, chopped (optional)
- 1 onion, sliced
- 3 level tsp curry powder
- 1/2 tsp turmeric
- 2 Granny Smith apples
- 2 carrots, peeled and chopped
- 6 dried apricots, chopped
- 1 large ripe tomato, skinned and chopped
- 2 litres (8 cups) good chicken stock (or bouillon cubes with water)
- Squeeze of lemon juice
## Instructions
1. Melt butter in a large saucepan. Add bacon and sauté onion until soft and glossy.
2. Add curry powder and turmeric — sauté one minute.
3. Add rest of ingredients. Simmer for about 3/4 hour.
4. Run through processor (blend until smooth).
5. Reheat and add lemon juice. Taste for salt.
6. Serve with whipped cream and a lemon slice and parsley.
7. Traditional garnish is boiled rice. -

APPLE WALNUT SQUARES
3 cups flour
2 teaspoons baking powder
1 teaspoon salt
1½ cups brown sugar, lumps
broken
1 teaspoon cinnamon
½ teaspoon allspice
2 sticks butter, cut into
pieces
3 eggs
½ cup apple cider or juice
1 cup chopped walnuts
½ cup raisins
3 cups apples, peeled, cored
and coarsely chopped
In large bowl, sift together
flour, baking powder and salt. Mix
in brown sugar, cinnamon and alls-
pice. With pastry blender or two
knives, cut butter into mixture until
it is as fine as oatmeal.
In another small bowl, lightly
beat eggs and add cider. Stir into
batter until well combined. Fold in
walnuts, raisins and apples. The
batter will be very heavy.
Butter a 9-by-12-inch baking
pan and spoon batter in, smoothing
out surface. Bake in preheated 325-
degree F. oven for 1 hour or until
golden brown and done. Cool and
cut into squares to serve.

1 # CAN Kraut, rinsed & drained
1 tsp Caraway seeds
1/2 c dry white wine
8 apple slices for garnish

Brown Chops in oil. Remove chops

Saute a little longer. Add Wine.
Transfer to Baking dish & arrange
Chops on top with 2 apple slices

- 8 apple slices for garnish

1. Brown chops in oil. Remove chops.
2. Add apples & onions and saute till tender.
3. Stir in kraut & caraway seeds. Saute a little longer.
4. Add wine.
5. Transfer to baking dish and arrange chops on top with 2 apple slices each.
6. Cover tightly and bake at 325° for 45 minutes to 1 hour, or till chops are tender. -
Roast Pork with Applekraut
ROAST PORK
WITH APPLEKRAUT
1 pork roast (2½ to 3 pounds)
2 teaspoons garlic salt
2 teaspoon paprika
½ cup butter or margarine
4 medium cooking apples, cored
and sliced in rings
4 cups drained sauerkraut (about
two 1-pound cans)
½ cup packed light
brown sugar
1 teaspoon cinnamon
¼ teaspoon salt
Dash nutmeg
Sprinkle meat with garlic salt and pa-
prika. Place meat on a rack in an open
roasting pan. Roast in a 325-degree oven
for 1½ to 2 hours or until meat thermom-
eter reaches 170 degrees. Remove from
oven and let stand 15 minutes for easier
carving; remove strings if rolled roast.
Meanwhile, melt butter in a large skil-
let. Add apple rings, a few at a time, and
cook until well browned. Stir in sauer-
kraut, brown sugar, cinnamon, salt and
nutmeg; cover and cook over low heat 30
minutes, stirring occasionally. Serve kraut
mixture with sliced roast pork. Yields 6 to
8 servings.

# Roast Pork with Applekraut
## Ingredients
- 1 pork roast (2 1/2 to 3 pounds)
- 2 tsp garlic salt
- 2 tsp paprika
- 1/2 cup butter or margarine

- 1/2 cup packed light brown sugar
- 1 tsp cinnamon
- 1/4 tsp salt

2. Place meat on a rack in an open roasting pan.
3. Roast in a 325-degree oven for 1 1/2 to 2 hours or until meat thermometer reaches 170 degrees.
4. Remove from oven and let stand 15 minutes for easier carving; remove strings if rolled roast.
5. Meanwhile, melt butter in a large skillet. Add apple rings, a few at a time, and cook until well browned.
6. Stir in sauerkraut, brown sugar, cinnamon, salt and nutmeg; cover and cook over low heat 30 minutes, stirring occasionally.

1. Wash and core the apples. They may be prepared for baking in one of the following ways:
1. Unpared (the skin may be cut halfway between stem and blossom end of apple — this makes the apple keep its shape better.)
2. Pared.
3. Upper half of apple only (around stem end) pared.
2. Place the apples in a granite, aluminium, or glass baking dish.
3. Pour a tablespoon of sugar in the core of each apple.
4. Pour the water around the apples.
5. Bake in a hot oven (400°F) for 20 to 40 minutes, or till tender when tried with a fork. -

Boil this altogether slowly for 2½ hrs
(don't chop raisins) Then add 1 teaspoon

## Ingredients
- 1 pk. green tomatoes, chopped and drained overnight
- 1 1/2 lbs. seedless raisins (small)
- 1 1/2 lbs. currants
- 1/2 of 6 lbs. brown sugar
- 1/2 pt. vinegar, or apple cider
- 1 tsp salt
- 1 tsp cinnamon
- 1 tsp nutmeg
- 1 tsp cloves
- 1 tsp allspice
- 2 qts. apples, chopped
- 1 cup suet, chopped
## Instructions
1. Chop green tomatoes and drain overnight.
2. Combine tomatoes, raisins (do not chop), currants, brown sugar, vinegar or apple cider, and salt.
3. Boil altogether slowly for 2 1/2 hours.
4. Add 1 tsp each of cinnamon, nutmeg, cloves, and allspice, along with the chopped apples and chopped suet.
5. Boil longer.
